I don’t eat vegetarian all the time, but I end up making meatless meals way more often than I probably realize. They’re just easier, most of the ingredients are already in my kitchen, they come together fast, and I don’t need a big plan to make something good. And if you’ve followed me for any amount of time, you probably know I’ve got several vegetarian family members, so I’m always thinking about meals that will work for everyone at the table.
I’m also pretty determined to make those meals taste just as good as anything with meat, not like a “less than” version. Honestly, a lot of the time these are the dishes everyone goes back for, not just the vegetarians.
There are so many nights when it’s already late, everyone’s hungry, and I need something quick that I know will actually get eaten. That’s where these recipes come in. They’re simple, filling, and full of flavor without a lot of effort.
