Ice Cream Pie My mom’s famous Ice Cream Pie, a summer staple, always amazed guests who thought it took hours to make. (She’s also famous for this Orange Fluff Salad) It’s more of a simple concept than a recipe: just choose a theme like chocolate, fruit, mint, or coffee, mix two compatible ice cream flavors, and use a pre-made graham cracker or cookie crust for an effortlessly delicious dessert. Ingredients Graham Cracker Crust: Crunchy, sweet base. We love using a store bought for convenience but make your own here. Salted Caramel Ice Cream: Creamy with a sweet-salty flavor. Fudge Brownie Ice Cream: Rich chocolate with chewy brownies. Optional Toppings: Whipped cream for lightness, shaved chocolate for extra chocolate flavor, and caramel sauce for sweetness and gooeyness. How To Make Ice Cream Pie Place a pre-made graham cracker crust as the base. Soften salted caramel and fudge brownie ice cream slightly. Alternately scoop both ice creams into the crust, forming layers. Press down with the crust’s plastic lid to compact. Freeze until firm. Serve with optional toppings like whipped cream, shaved chocolate, and caramel sauce. Ice Cream Pie Variations Minty: Try this Grasshopper version with an Oreo® crust and mint ice cream filling! Fruity: Use your two favorite sorbets or sherbets in a graham cracker crust. Turtle pie: Fill up an Oreo crust with caramel ice cream. Drizzle fudge and caramel ice cream sauces over top and sprinkle chopped pecans on top. Oreo pie: fill up an Oreo crust with cookies and cream ice cream. Garnish with whipped cream and additional crushed Oreos. Coffee version: fill up an Oreo crust with coffee ice cream, drizzle with hot fudge sauce Strawberry-cheesecake pie recipe: This is my favorite recipe! Adding a cornflake crust: try this crust recipe! QUICK TIP To get clean slices, run your knife under hot water for a few seconds, wipe to dry, make 1 slice, and repeat. (Try not to let the ice cream get too soft/melted or it could get icy once it is re-frozen).Once the pie is hardened, cut into large slices and, if desired, top with whipped cream, a drizzle of caramel sauce, and shaved chocolate. I use a vegetable peeler to shave the underneath of a chocolate bar right on top of the pies. Return any leftovers to the freezer. OMG this is genius! I can’t believe how easy this pie is! I bet it can also be done with other ice-cream flavors and different toppings as well. Thanks so much for sharing this Chelsea! Pinned! 🙂 Reply
Ooh, that is so fun, getting to pick the theme! I like the way your mom does it – I need this in my life weekly (ok, daily would be nice, but probably not the best habit 🙂 ) Reply
Why have I never seen or made an ice cream pie before? Brilliant! This looks so good! I can’t wait to try! Reply

I love this idea and I support your flavor combos! Salted caramel is making me super duper happy these days, and chocolate is always a must 😀 Reply
We make a very similar ice cream cake, but it has layers of two flavors. I love that this pie has alternating scoops of ice cream. So fun and delicious! Reply
