S’mores Bars
S’mores Bars are one of my mom’s signature desserts. While she didn’t invent the recipe (pretty sure it came from the back of a Golden Grahams® box), she’s made them for years and is basically famous for them. If you like S’mores, you’ll love these—they’re always the first to disappear at parties, and she brings them to almost every event.
They’re one of my all-time favorite treats. I’ve had more than my share over the years, and I still don’t think I’ll ever get tired of them.
The best part? They take just 15 minutes, need only six ingredients, and require no baking. It’s the easiest way to get your S’mores fix—any time of year!
How To Make S’mores Bars
- Microwave. Combine some marshmallows, some chocolate chips, butter, and corn syrup. Microwave until smooth.
- Add remaining ingredients. Stir in the rest until combined. It’ll get thick and sticky!
- Press into pan. Press into a pan and let set until firm. Waiting is the hardest part!
And (just being real here) only 60% of the S’mores Bars ever make it through the full “setting up time.” Just saying.
S’mores Bar Tips
- Grease the pan. These bars are sticky, so a well-greased pan helps them come out easily. You can also use baking paper or foil.
- Boost the flavor. Stir in a little vanilla to the melted marshmallows. It adds nice flavor, but the bars still taste good without it.
- Use good chocolate. Ghirardelli® or Guittard® melt better and have more flavor. Cheaper chocolate can be waxy and not as tasty.
- Pick a cereal you like. Golden Grahams work well, but I like Malt O Meal® Honey Graham Toasters.
- Microwave carefully. Heat the marshmallow mix in short steps, stirring each time. It keeps melting even after microwaving.
- Don’t press too hard. Lightly press the mix into the pan—pressing too much makes the bars tough.
Quick Tip
Use fresh, soft marshmallows. The fresher and softer the marshmallows, the chewier the S’mores Bars will be. When you’re at the store, press on the bags of marshmallows and pick the softest one.

These S’mores Bars are best the same day they are made. After that, they quickly get harder and become stale.
Because of the individual marshmallows throughout the bars, these don’t freeze or thaw particularly well (the marshmallows harden as they thaw).

Ingredients
- 8 cups graham cracker cereal such as Golden Grahams, see note 1
- 6 cups miniature marshmallows divided
- 2 cups milk chocolate chips divided, see note 2
- 5 tablespoons unsalted butter cut into cubes
- 1/4 cup Light corn syrup
- 1 teaspoon vanilla extract
- Cooking spray
Instructions
- Generously grease a 9×13-inch pan and set aside. Place the cereal in a very large bowl and set aside.
- In another very large, microwave-safe bowl, add 5 cups mini marshmallows, 1 and 1/2 cups chocolate chips, cubed butter, and corn syrup. Stir and place in the microwave for 2–4 minutes, removing to stir every 20 seconds for about 15–20 seconds, making sure to really scrape the bottom, then return to the microwave. Microwave until the mixture is just melted and smooth; don’t heat more than needed.
- Once mixture is smooth, stir in vanilla. Pour the mixture over the cereal and gently but quickly toss to combine. Add remaining 1 cup marshmallows and 1/2 cup chocolate chips and stir until just incorporated.
- Pour into the prepared pan. Spray your hands with cooking spray and gently press down the bars. (Don’t press them too hard or it will make the bars hard.)
- Let stand, uncovered, for 1 hour (refrigerate for firmer bars).

I don’t often but milk chocolate, do you think ghirardelli semisweet would work? I’m trying to imagine it, and having trouble! I don’t want to go to the store!
