This easy recipe is great as an appetizer, snack, or dessert! It features a creamy fruit dip (“clouds”) that pairs perfectly with fresh fruit.

Fruit Rainbow Tray Ingredients

The fruit dip makes up the “clouds” on this Fruit Rainbow Tray. Here’s what makes up this dip:

  • Cream Cheese: Use full-fat, brick-style (we prefer Philadelphia®) for best results.
  • Marshmallow Fluff: Grab high-quality (Kraft® Jet-Puffed recommended).
  • Citrus Juice: A dash to improve flavor; clementine, orange, lime, or lemon.
  • Pinch of Salt: To balance sweetness and enhance flavors.

How to Make The Fruit Dip

  • Soften Cream Cheese: Microwave for 15 seconds, flip, then another 10-15 seconds until soft, not melted.
  • Beat Cream Cheese: Beat in a large bowl until smooth.
  • Add Marshmallow Fluff: Run spoon under hot water, then beat fluff and cream cheese together.
  • Add Flavorings: Mix in citrus juice and a pinch of salt.

QUICK TIP

Chill the dip for at least 30 minutes before serving for enhanced flavor.

Make A Fruit Rainbow Tray

  • Red: Use strawberries, raspberries, cherries, watermelon, red apples, pomegranate.
  • Orange: Try oranges, mandarins, cantaloupe, peaches, apricots.
  • Yellow: Add pineapple, mango, banana, yellow pears, apples. (Prevent banana browning.)
  • Green: Go for kiwi, green apples, honeydew, grapes, pears.
  • Blue/Purple: Choose blueberries, blackberries, purple grapes, plums, figs.

STORAGE

Storing Fruit Rainbow Tray

Store leftover fruit in separate airtight containers in the fridge for 1-2 days to avoid flavor mixing. Keep the dip in its own container for a few days, stir well before reuse, and thin with citrus juice if too thick.

Ingredients

"Rainbow" (Fruit)

  • Red fruit, such as strawberries
  • Orange fruit, such as oranges
  • Yellow fruit, such as pineapples, mango, or banana
  • Green fruit, such as kiwi
  • Blue fruit, such as blueberries
  • Purple fruit, such as grapes

"Clouds" (Fruit Dip)

  • 1 pkg. (8 oz.) full-fat, brick-style cream cheese (Note 1)
  • 1 container (7 oz.) marshmallow fluff/creme (Note 2)
  • 2 tablespoons freshly squeezed juice of a clementine (or orange)
  • Tiny pinch of fine sea salt

Instructions

  • SOFTEN CREAM CHEESE: Remove the cardboard box and inner foil wrapper from the block of cream cheese. Place in a microwave-safe bowl or plate and microwave for 15 seconds. Flip the block of cream cheese over and microwave for another 10-15 seconds or until softened. Time will vary, depending on your microwave; just remember you want it softened-- not melted.
  • ADD MARSHMALLOW FLUFF: Place the softened cream cheese in a bowl attached to a stand mixer with the whisk attachment (or use a large bowl and beat with a hand mixer). Run a spoon under hot water and dry it off then use to scoop out the marshmallow fluff. Add the fluff to the bowl along with the fresh clementine juice and salt. Beat at steady speeds (don't whip it!) until completely smooth and creamy.
  • CHILL: Cover and refrigerate the dip until thoroughly chilled, for about 30 minutes.
  • ASSEMBLE: Prep the fruit by washing and completely drying. (Make sure it is 100% dry before serving it with the dip-- otherwise, the dip slides right off!) Assemble the fruit on a large flat plate or platter to look like a rainbow. Scoop up the dip and place it like clouds at the bottom of the rainbow. Use the back of the spoon to add texture to the clouds. Enjoy promptly!
