I am completely chicken salad obsessed. I make it constantly for lunch, for hosting, and even for quick dinners when I do not feel like cooking. It is one of those recipes that always works.
Curry is my other big love. The warm spice, the big flavor, the way it instantly makes simple food taste special. So naturally, I had to combine the two.
This Curry Chicken Salad brings all that curry flavor I crave but keeps everything just as simple as my classic chicken salad. Five ingredients in the salad, six in the dressing, and it comes together in about 15 minutes thanks to rotisserie chicken. No cooking. No complicated steps. Just mix, taste, and eat.
Toss it together, pile it onto bread or lettuce, and lunch or dinner is done.
