Chicken Caesar Sandwich

A solid Caesar Salad holds a special place in my heart, and while I love making the recipe I’ve shared on this site, I admit, I frequently choose a pre-packaged one to accompany a more complex dish. During hectic weeknights, especially in the midst of back-to-school chaos, who’s got the time to prepare a main dish, sides, and a salad from scratch? Typically, I’m not a fan of store-bought salad mixes, but with Caesar salad kits, it’s a different story—they’re legitimately delicious!

So, in today’s recipe, we’re using a Caesar salad mix, tossing in some chicken for a protein boost, adding avocado for a creamy texture and healthy fats, and tucking it all into a crispy toasted sub roll. The result? An easy, flavorsome dinner (or lunch) that’s sure to become a new favorite!

Chicken Caesar Sandwich Ingredients

  • Hoagie/sub rolls: When it comes to bread, freshness is key. If possible, ensure the rolls are fresh from the bakery and soft.
  • Softened butter: Allowing the butter to reach room temperature will make it easier to spread on the rolls. If you’re in a hurry, you can soften it in the microwave; just be careful not to melt it.
  • Chopped Caesar salad kit: These kits can be a real timesaver! We’d recommend checking the freshness date before purchasing. The fresher the salad, the better the final flavor of your sandwich.
  • Rotisserie chicken: A perfect shortcut for this recipe. Leftover grilled chicken or leftover baked chicken is also a great option. (Keep the seasonings simple!) Pre-cooked and seasoned chicken is a total time saver on its own, but to save even more time on the chicken, you can purchase rotisserie chicken meat already pulled from the bones and shredded or diced — a lot of grocery stores sell this conveniently prepared chicken!
  • Ripe avocado: Make sure your avocado is ripe but not too soft, which can make your Chicken Caesar Sandwich mushy. The avocado should yield to gentle pressure when squeezed but not feel squishy.
  • Mayonnaise: Opt for a high-quality, full-fat mayo for the best flavor. For a lighter option, you can use a low-fat or olive oil-based mayo.
  • Garlic powder: Keep in mind that a little goes a long way. Start with a small amount and adjust to personal preference! This adds a subtly complex flavor to the sub rolls.

How To Make Chicken Caesar Sandwiches (Tips)

  • Toasting the rolls: Be sure to toast the hoagie rolls enough so they’re crispy on the outside, but still soft inside. This will add texture to your sandwich and prevent it from becoming soggy.
  • Checking avocado ripeness: Use ripe avocados for best results. If your avocados are not ripe, place them in a paper bag with an apple or banana to speed up the ripening process.
  • Serving immediately: The sandwiches are best enjoyed immediately after assembly to prevent the bread from becoming soggy.
  • Feeding a Crowd: If you’re making this for a crowd, you can have all the components prepared in advance and assemble the Chicken Caesar Sandwiches when ready to serve.

  • SALAD: Pour the contents of the chopped Caesar salad kit into a large bowl. Add the chopped or shredded rotisserie chicken to the bowl. Using tongs, mix well until everything is well coated.
  • ROLLS: Brush the insides of the sub rolls with softened butter. Toast them in a toaster or a skillet until they are slightly crisp. After toasting, generously spread mayonnaise over both sides of the sub rolls and lightly sprinkle with garlic powder.
  • ASSEMBLE: Thinly slice the ripe avocado and layer the slices onto the bottom half of each sub roll. Next, add a generous amount of the salad mixture on top of the avocado slices, dividing it evenly between the sub rolls. Sandwich the top and bottom together and dig in!

Note 1: Caesar salad kit: I prefer using a packaged chopped salad kit to ensure the lettuce pieces are conveniently small. If you can't find such a kit, simply spread the lettuce on a large cutting board and use a chef's knife to chop it into smaller bits. Also, if your salad kit doesn't include bacon, adding some to these sandwiches can bring an extra layer of flavor and crunch!
Note 2: Rotisserie chicken: Many grocery and warehouse stores offer hot-and-ready rotisserie chicken! However, for the quickest prep time, I suggest buying rotisserie chicken meat that has already been pulled from the bones and shredded. You can usually find this in the deli section of most grocery stores.
  • OR: Leftover cooked or grilled chicken: If you have some on hand, leftover baked chicken or grilled chicken with a basic salt and pepper seasoning can also work well for this recipe.

    Cant wait to make this soon for me can i use vegan butter and tofu and can i use other leafy greens as am not a big fan of lettuce i never had chicken caesar sandwich before perfect for my after office meals love your recipes as always brightens up my day everyday after work
