Can’t Stop, Won’t Stop Eating This Salad!

Peaches have always been my favorite fruit, so when peach season hits, I go a little overboard in the best way.

Peach lemonade, peach cobbler, grilled peaches, peach pie…I’m all in.

So it only felt right to finally share my go-to fruit combo for the ultimate summer salad. This peach fruit salad has it all: crunch, sweetness, and a little tang. It’s everything I crave on a hot summer day!

Peach Fruit Salad

Peach Fruit Salad is packed with juicy peaches, fresh berries, and tossed in a light citrus dressing. It’s the easiest summer side dish!

Ingredients

Citrus Dressing
  • 2 tablespoons honey
  • 1 to 2 clementines (1/2 tsp zest; 1 tbsp juice)
  • 1 large lemon (1/2 tsp zest; 1 tbsp juice)
  • 1/4 teaspoon vanilla extract optional
Fruit
  • 16 ounces fresh strawberries hulled and thinly sliced, 2 cups
  • 6 ounces fresh blueberries 1 cup
  • 6 ounces fresh blackberries 1 cup
  • 2 ripe peaches pit removed and thinly sliced, 2 cups
  • 8-10 fresh mint leaves or fresh basil, optional

Instructions 

  • Add all the dressing ingredients to a mason jar. Shake well to combine, then stir if the honey settles.
  • Wash and dry all the fruit thoroughly (excess moisture prevents the dressing from sticking). Hull and thinly slice strawberries. Peel the peaches if desired (I usually don’t), then thinly slice.
  • (Optional): For best flavor, chill the (undressed) fruit in the fridge before serving.
  • Add all the fruit to a large bowl. Drizzle the dressing over top, using as much or as little as you’d like. Gently toss to coat.
  • Very thinly slice or tear the fresh mint or basil. Sprinkle on top, if using, and serve right away.

Recipe Notes

Storage: Fruit Salad is best enjoyed the same day it is dressed. If you’d like to have leftovers, store dressing and salad separately and only add dressing to the salad you’ll be enjoying that day.
