This Peach Feta Salad is basically my summer dream in a bowl. I threw in all my favorite things: sweet corn, juicy peaches, fresh basil. And then, I added the two ingredients I use constantly: avocado and cucumber. To top it off, I used the citrus dressing from my strawberry salad that I can’t stop making lately.
I figured I’d love it, but wow…I was not ready. I ate the entire bowl the first time. Yes, really. I’ve made it a bunch of times since, and yes, I did share (eventually).
This peach feta salad is fresh, bright, creamy, crunchy, and full of flavor. Just make sure to enjoy it the same day and use the ripest peaches you can find. I hope you get a chance to make it before summer is over!

Ingredients
- 3 ears corn on the cob grilled, see note 1 (~2 cups)
- 1 cup diced cucumber 3-4 Persian cucumbers
- 1-1/2 cups diced fresh peaches 2-3 (peel if you'd like, I don't)
- 1 small avocado diced
- 8 basil leaves thinly sliced
- Crumbled feta cheese added to taste
- 2 clementines 1 tsp zest; 2 tbsp juice
- 1 lemon 1/2 tsp zest; 1 tbsp juice
- 1-1/4 tablespoon honey
- 1 teaspoon Dijon-style mustard
- 1/4 teaspoon salt
- 1/4 cup olive oil
Instructions
- Combine all of the dressing ingredients in a small blender jar. Blend until smooth and emulsified. Don't over-blend. Transfer to a mason jar and store in the fridge until ready to use.
- Grill the corn and let fully cool. Slice kernels off and add to a large bowl. Add all other salad ingredients, except for feta. Toss with the dressing (to taste, you may not want it all). Taste and adjust. Serve, adding feta to individual plates.

How To Grill Corn
Before adding the grilled corn to this Peach Feta Salad, make sure it’s completely cooled.
- Prep Corn: Remove husks and silk. Rub corn with olive oil and sprinkle with salt and pepper.
- Preheat Grill: Heat grill to medium-high, about 400°F.
- Grill Corn: Place corn directly on the grill. Cook for 10–12 minutes, turning every 3 minutes until lightly charred.
- Cool & Cut: Let corn cool completely, then slice kernels off the cob.

For all your dressings, do you use plain olive olive? Not EVOO? Also, I’ve never juiced a clementine. Do you use a lime juicer for those? Do you get more than a tsp or Tbsp from a clementine? This salad sounds very refreshing & I hope to make it soon. Most peaches I’ve bought recently are not ripening properly but turning mealy instead… I leave them on the counter to ripen.
I use extra virgin olive oil in all my cooking 🙂 Yes I use a lime/lemon juicer for clementines! It depends on the clementine, I can typically get 1-2.5 tbsp juice from each. Good luck with your peaches! Enjoy!
