My sister goes crazy for ravioli — she will eat them plain and for any meal of any day! I don’t get to see her too frequently, so when I do, I make sure I’ve made something for her that has plenty of ravioli.

And this dish is pretty much tailored to her taste-buds — ravioli is the star, there are veggies and protein added, and it’s all topped with Parmesan cheese. All her favorite things in one hearty dish that can be ready in 20 minutes or less.

The ravioli I’m using today is the Buitoni Parmesan & Black Pepper Ravioli. These freshly made raviolis are filled to the brim with real cracked black pepper and four cheeses — creamy ricotta, aged Parmesan and Romano, and imported Grana Padano. Each ravioli is bursting with delicious flavors and no GMO ingredients.

This dish packs a bit of a kick, but you can absolutely scale down on heat by reducing or omitting the red pepper flakes and using a mild Italian sausage. If you’re all about the heat though, get some spicy Italian sausage and lay on the red pepper flakes! The cheese inside the ravioli as well as the Parmesan cheese on top of everything mellows out the heat leaving all the flavors perfectly balanced.

While we’ve loved the brussels and mushrooms with the other flavors, those veggies are easy to interchange with whatever you like best. Swapping out for bell peppers, onions, asparagus, corn, and/or cherry tomatoes would be delicious!

Enjoy!

Ingredients

  • 1 package (9 ounces) BUITONI Parmesan & Black Pepper Ravioli
  • 3 tablespoons olive oil separated
  • 1/2 pound spicy Italian Sausage
  • 8 ounces fresh brussels sprouts
  • 2 cups cremini mushrooms
  • 1 and 1/2 teaspoons minced garlic
  • 1/2 teaspoon freshly cracked pepper
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup low-sodium chicken broth
  • 1/3 cup freshly grated Parmesan cheese

Instructions

  • Start by preparing the ravioli according to package directions. Drain. Cut off the ends of the brussels sprouts and remove any yellow leaves from the outsides. Thinly slice the brussels and then give them a quick coarse chop. Slice the mushrooms. Set both aside.
  • Meanwhile, add 2 tablespoons olive oil to a large skillet over medium high heat. Add in the sausage and finely break it up with a wooden spoon as it browns.
  • Move the sausage to the edges of the pan (do not drain it) and add in the brussels sprouts and mushrooms. Saute, stirring occasionally (not too much to allow the veggies to get a little caramelized) until crisp tender. Add in the garlic, pepper, and red pepper flakes while cooking the veggies.
  • Pour in the chicken broth and the cooked + drained ravioli. Toss to coat. Drizzle remaining tablespoon of olive oil over everything (feel free to add more oil if desired). Sprinkle on the Parmesan and enjoy immediately.
  • Add additional cracked pepper, red pepper flakes, and parmesan to individual plates as desired.
