My Sister’s Cottage Cheese Toast!

I was never a fan of cottage cheese growing up, but when I started focusing on protein, I realized how great of a source it is. The challenge? Learning to enjoy it.

Then, my sister sent me a photo of her savory Caprese cottage cheese toast, claiming it would win me over. Skeptical but curious, I grabbed the ingredients and gave it a try.

You guys, it completely changed my mind! It was the best way I’ve ever enjoyed cottage cheese. I loved it so much that I had the same toast for breakfast every day that week.

  • Cottage cheese see note 1

  • 1 handful cherry tomatoes halved
  • 1 handful fresh basil small or thinly sliced larger leaves
  • Olive oil for drizzling
  • Balsamic reduction for drizzling

Instructions 

  • Toast sourdough bread and let it cool slightly.
  • Thinly slice avocado and lightly mash it on toasted bread.
  • Add a few spoonfuls of cottage cheese on top of the mashed avocado.
