We’ve Tried SO Many Yogurt Bark Variations and This Is Our Favorite!

Among the myriad yogurt bark variations I’ve sampled, the recipe I’m about to share stands head and shoulders above the rest. While many recipes include a range of berries, I’ve found that these can often be too overpowering and difficult to eat when frozen. My solution? Use raspberries and thinly slice them beforehand. What’s more, mixing the raspberries into the yogurt instead of placing them on top makes for a much more enjoyable eating experience. Believe me when I say, this is the best yogurt bark you’ll try!

What’s more, this snack is incredibly customizable. Feel free to let your creativity run wild by experimenting with various toppings, from different nuts and seeds to chocolate chips. It’s a versatile treat that can be tailored to satisfy your personal cravings.

And the cherry on top? This Yogurt Bark is a fantastic snack to keep on standby in your freezer. When a craving strikes, simply snap off a piece enjoy! Perfect for a mid-afternoon pick-me-up, a post-workout refuel, or a late-night treat.

Yogurt Bark Ingredients

  • Greek yogurt: Use full-fat Greek yogurt for the richest taste and texture. We love using honey-vanilla Greek yogurt for added sweetness and flavor.
  • Honey: This natural sweetener pairs perfectly with Greek yogurt, enhancing its flavor without overpowering it. You can adjust the amount of honey according to your personal preference. If you’re watching your sugar intake, you can also experiment with other natural sweeteners like stevia or monk fruit.
  • Vanilla extract: A dash of pure vanilla extract infuses the bark with a subtle sweetness and nice flavor. 
  • Sea salt: A pinch of fine sea salt enhances the flavors. Salt might seem like a surprising ingredient in a dessert, but it balances the sweetness and brings out the flavors of the other ingredients.
  • Raspberries: Fresh raspberries add a pop of color and a burst of tartness to the bark. Thinly slicing the raspberries and mixing them into the yogurt ensures even distribution and a more enjoyable eating experience when frozen. Other berries can be overwhelming and hard to eat when frozen in the bark, so raspberries are the best choice.

How To Make Yogurt Bark (Tips)

Here are some tips to ensure your Yogurt Bark recipe turns out perfectly every time:

  1. Choose a good, full-fat Greek yogurt: Full-fat Greek yogurt provides a rich, creamy texture. If you go with a low-fat or non-fat version, the bark might turn out icy rather than creamy. It’s crucial to select a Greek Yogurt whose flavor you appreciate in its unadulterated form. If you don’t enjoy its taste without any additional ingredients, chances are you might not love it as the base of this Yogurt Bark. See the “quick tip” box below.
  2. Sweeten to taste: The amount of honey you use depends on your personal preference and the sweetness of the yogurt (especially if you’re using flavored yogurt). Taste the mixture before freezing and adjust the sweetness as needed.
  3. Slice the raspberries thinly: Thin slices freeze well and are easy to bite into. Plus, it helps distribute the fruit flavor more evenly throughout the bark.
  4. Freeze completely: Make sure the bark is fully frozen before you try to break it into pieces. This takes anywhere from 4-8 hours.
  5. Use parchment paper: Line your baking sheet with parchment paper to make it easier to remove the bark after it’s frozen. It also makes cleanup a breeze!
  6. Customization is key: One of the best things about this recipe is its versatility. Experiment with different fruits, nuts, and toppings to make it your own!

Our Favorite Toppings

We love creating a dual-flavored Yogurt Bark by dividing the toppings into two categories: one half is sprinkled with pistachios, and the other half gets a combination of granola and almond butter.

  • Pistachios: Roasted and salted pistachios provide enhanced flavor without any extra effort on your part. Since they’re already roasted, they retain crunchiness in the yogurt longer. Shelled pistachios will save you the hassle of shelling them yourself and you’ll find them in the snack aisle or bulk food section of most grocery stores. Of course, you’re not limited to pistachios – feel free to substitute with other nuts or even a combination of your favorites!
  • Granola: Granola offers an additional crunch and diversifies the flavor profile. Select a variety that you particularly enjoy, or for a truly personalized touch, consider making your own at home. (See the “quick tip” box below for ideas.)
  • Almond butter: A drizzle of almond butter across the bark not only contributes a layer of richness but also infuses the bark with healthy fats. There’s plenty of room for experimentation here, too. Try different kinds of nut butter or even a drizzle of melted dark chocolate chips for a sweet twist!

VARIATIONS

Change Up Yogurt Bark

This Yogurt Bark is highly customizable, and here are some exciting variations you can try:

  • Fruits: While raspberries are a fantastic choice, you can also experiment with other fruits. Whatever fruit you use, thinly slice or dice the fruit for an easier eating experience. Consider diced strawberries, halved blueberries, thinly sliced blackberries, or even a tropical twist with diced mango or diced kiwi. 
  • Nuts and seeds: Pistachios are great, yet other nuts like chopped almonds, walnuts, or pecans can add their unique flavors and crunch. For a nut-free version, try seeds like chia, flax, or sunflower seeds.
  • Dried fruits: For an added burst of sweetness and a different texture, try sprinkling some dried fruits like cranberries, raisins, golden raisins, or chopped dates on top.
  • Chocolates: If you’re a chocolate lover, consider adding dark chocolate chips, cacao nibs, or even drizzling a bit of melted chocolate over the top before freezing.
  • Other yogurt flavors: Although honey-vanilla Greek yogurt is suggested, you can also experiment with other flavors of Greek yogurt, such as coconut or even a citrus flavor like lemon. But do stick with Greek yogurt; other types don’t have the same consistency.
  • Protein powder: For a post-workout boost, consider adding a scoop of your favorite protein powder to the yogurt mixture.

STORAGE

Storing Yogurt Bark

Make sure to store Yogurt Bark properly to maintain its taste, texture, and freshness. Here are some tips:

  • Once the bark is frozen and broken into pieces, transfer it to an airtight container or a resealable freezer bag. This will prevent it from absorbing odors from other food items and protect it from freezer burn.
  • If you need to stack the bark in layers, place a sheet of parchment or wax paper between the layers to prevent the pieces from sticking together. Store the pieces in a single layer if you have enough space. This allows you to easily grab a piece whenever you want without having to pry it from the others.
  • Yogurt bark can last up to 2 weeks in the freezer, but for the best flavor and texture, enjoy it within the first few days.
  • Yogurt bark is best enjoyed straight from the freezer. It begins to melt fairly quickly at room temperature, so only take out what you plan to eat immediately.

Ingredients

  • 2 cups Greek yogurt full-fat (we like honey-vanilla) (Note 1)
  • 1-3 tablespoons honey (Note 2)
  • 1 teaspoon pure vanilla extract
  • teaspoon fine sea salt
  • 1⅓ cups fresh raspberries, thinly sliced (6 oz. containers)

Instructions

  • PREP: Line a rimmed baking sheet with parchment paper. Wash the raspberries and dry them thoroughly to prevent them from becoming icy. Thinly slice or chop them and set aside.
  • YOGURT MIXTURE: In a medium-sized bowl, whisk together the yogurt, salt, and vanilla extract. Gradually add the honey, adjusting the quantity to suit your taste (See Note 2). Use a spatula to gently fold the sliced raspberries into the yogurt mixture until well combined.
  • SPREAD ON THE PAN: Transfer the mixture to the prepared tray and use a spatula to spread it out evenly to about ¼-inch thickness.
  • TOP: Sprinkle half of the bark with chopped pistachios and the other half with granola. Put the almond butter into a small bag, snip off the top, and pipe it over the granola-covered half. Freeze the tray overnight, or for about 4-8 hours, until it's entirely firm.
  • SERVE: Once fully frozen, cut the bark into pieces using a sharp knife. Enjoy it straight from the freezer; it melts quickly at room temperature.
  • STORAGE: Store the frozen pieces in an airtight container or resealable freezer bag, arranged in a single layer. If you must stack them, separate layers with parchment paper to prevent sticking. The bark can last up to 2 weeks in the freezer, but it's best enjoyed within the first few days for optimal flavor and texture.

Note 1: Yogurt: Choose a full-fat Greek yogurt that you enjoy on its own to ensure a creamy texture for your bark. If you use a low-fat or non-fat version, the bark might turn out icy rather than creamy. Our hands-down favorite to use here is this honey-vanilla yogurt.

    I guess I was expecting it to be more of a BARK consistency. This had more of an over frozen taste. Not really going to hold me over for anything, nor tickle my taste buds.

    1. Oh bummer. Did you change the recipe at all? How long did you freeze it for? I wonder if you used a low-fat or fat free yogurt which could have made it more icy/frozen tasting? Either way sorry you didn’t love this; it’s one of our favorites!
