My Perfect Bowl of Overnight Oats

In more than a decade of sharing recipes online, I’ve learned that people tend to have strong opinions about oatmeal. Some love it thick enough to hold its shape, while others prefer it soft, creamy, and almost pudding-like.

I’m firmly in the creamy camp, and that’s exactly what you’ll get with this recipe. These protein overnight oats have a loose, spoonable consistency with a noticeable chia pudding texture. Stirring in Greek yogurt or nut butter thickens them up beautifully, or you can reduce the chia seeds slightly for a more oat-forward texture.

All that said, this is my absolute favorite protein overnight oats recipe and a breakfast I’ve had on repeat for the past few months. I’m fully obsessed with the flavor, the creamy texture, and all the toppings. Whew, it’s good!

How To Get Your Perfect Texture

This protein overnight oats recipe is intentionally creamy. Keep in mind that the final consistency can vary slightly depending on the protein powder, milk, oats, and chia seeds you use.

For thicker oats, start with a little less milk or stir in Greek yogurt or nut butter before serving.

For a more oat-forward texture, slightly reduce the amount of chia seeds. If the oats become thicker than you like after chilling, simply stir in another splash of milk. Be sure to stir the oats thoroughly before serving since some of the chia seeds may settle as the mixture chills.

Can I Make Protein Overnight Oats Without Chia Seeds?

Yes, but the oats will be thinner and won’t have the same creamy, pudding-like texture. Start with 1 to 1-1/4 cups of almond milk, then stir in more after chilling as needed to reach your preferred consistency.

Do You Eat Overnight Oats Cold or Warm?

Overnight oats are typically eaten cold straight from the fridge, which is how I eat this recipe! If cold oatmeal isn’t your thing, you can gently warm an individual serving in the microwave. Add a splash of milk as needed to keep the oats creamy.

Can I Use A Different Milk?

Yes! Unsweetened vanilla almond milk gives these oats a creamy texture and adds even more vanilla flavor, but another dairy or non-dairy milk will also work. Keep in mind that different types of milk may slightly change the flavor and thickness of the finished oats.

Storage

Store the oat mixture in an airtight container in the refrigerator and enjoy it within 3 days. Keep the toppings separate and add them to individual servings right before eating for the best texture.

Protein Overnight Oats
  • 1 scoop vanilla protein powder a good one you love, see note 1
  • 2 cups unsweetened vanilla almond milk
  • 1/4 cup chia seeds
  • 1 cup old-fashioned oats
  • Small pinch salt
  • 1-1/2 tablespoons pure maple syrup plus more for topping, see note 2
  • 1/4 teaspoon ground cinnamon optional
  • 1/2 teaspoon vanilla extract
Optional Toppings (Pick A Few or All):
  • 1 swirl of peanut butter or almond butter
  • 1 scoop of good Greek yogurt I love Greek Gods
  • Fresh berries like raspberries, strawberries, blackberries, blueberries
  • 1 handful granola
  • 1 small handful coarsely chopped nuts dry roasted and salted

Instructions 

  • Blend together milk and protein powder just until smooth. In a large container add milk mixture with all of the other ingredients listed under "Protein Overnight Oats." Use a whisk to mix well until nicely combined. Be sure nothing settles on the bottom.
  • Cover the container and refrigerate overnight.
  • Scoop out desired portion into a bowl and add any and all of your desired toppings. This is where overnight oats get fun! I love adding in a drizzle more milk for a creamier texture then topping with a scoop of good yogurt and/or nut butter plus berries, and some granola or chopped nuts. Enjoy!

Note 1: Use a protein powder you know and love, since its flavor comes through strongly in this recipe. Clean Simple Eats and Just Ingredients are my favorites.
Note 2: Honey also works! If using maple syrup, be sure to use pure maple syrup, not pancake syrup. Adjust the amount based on your preferred sweetness and how sweet your protein powder is. Add another drizzle on top before serving, if desired.
