  • 2 cups cherry tomatoes halved
  • 2 cups cooked chicken diced
  • 1/2 cup sun-dried tomatoes coarsely chopped
  • 4 ounces feta cheese crumbled
  • 1 gently packed cup fresh basil leaves torn into small pieces
Dressing
  • 1/2 cup olive oil
  • 1/3 cup apple cider vinegar
  • 1 teaspoon garlic paste or minced garlic
  • 1 tablespoon Dijon-style mustard
  • 1 tablespoon honey
  • 1-1/2 teaspoons Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions 

  • Dressing: Combine all dressing ingredients in a wide-mouth mason jar. Secure lid tightly and shake until mixed well. Refrigerate until ready to use.
  • Bring 12 cups of water to a rolling boil. Add 1 tablespoon salt, then pasta. Cook according to package directions until al dente. Drain pasta, rinse under cold water for 20 seconds, and fully shake off any water.
  • Transfer pasta to a large bowl. Shake dressing well and pour about ⅔rds of it over the pasta. Toss to coat evenly. Refrigerate pasta until fully cooled.
  • Once pasta is cooled, gently mix in cucumber, cherry tomatoes, chicken, sun-dried tomatoes, feta cheese, and fresh basil.
  • Pour remaining dressing over the salad. Toss gently but thoroughly. Taste, adjust seasoning if needed, and serve right away.
