Frozen S’mores, No Campfire Needed!
When it’s hot out, I’m all about cold treats like this Frozen Yogurt I can’t stop making, Gelato, or Cookie Dough Ice Cream Bars. If it’s cold and doesn’t need the oven, I’m in.
These Frozen S’mores are my newest obsession. They’re cold, creamy, chocolatey, and so easy to make. No baking, no heat. Just layer, chill, and enjoy.
They’ve got all the best parts of classic s’mores: crunchy grahams, fluffy marshmallow, and rich chocolate, but in frozen bar form.
Frozen S’mores Ingredients
- Instant chocolate pudding mix: Use one 5.9-ounce box of instant (not cook-and-serve, sugar-free, or low-fat).
- Whole milk: Use whole milk for the creamiest texture. 2% works, but won’t be as rich.
- Frozen whipped topping: Thaw fully. Use regular (not sugar-free or light) for best texture. Homemade whipped cream works but isn’t as stable.
- Cream cheese: Use full-fat brick cream cheese. Avoid whipped or low-fat.
- Marshmallow creme: Adds that classic S’mores flavor. I like Kraft® Jet-Puffed.
- Fine sea salt: Just a pinch brings out the sweetness and boosts flavor.
- Vanilla extract: Even a little pure vanilla makes a big difference.
- Honey graham crackers: Give a nice crunch. Try chocolate grahams for a fun twist.
How To Make Frozen S’mores (Tips)
- Prep ahead: These need at least 8 hours or overnight to set, so plan ahead.
- Use quality ingredients: Especially for the pudding mix and graham crackers.
- Cream cheese & whipped topping: Let cream cheese soften and whipped topping fully thaw for a smooth mix. See quick tip below.
- Parchment paper: Line the pan with parchment and leave an overhang to lift the bars.
- Cutting: Use a warm knife for clean cuts. Run under hot water, dry, then slice.
- Serving: Let bars sit out 10 to 15 minutes before serving so they’re easier to bite.

Soften the cream cheese to room temperature so it mixes smoothly with the other ingredients. An easy way to soften cream cheese is to leave it out of the refrigerator for about an hour before you start cooking. If you forget, you can also soften it (unwrapped) in the microwave on a low power setting.
Variations
Change Things Up!
- Flavored pudding: Swap out the chocolate pudding for another flavor. Vanilla or butterscotch would make a delicious alternative while still keeping the spirit of the traditional s’more.
- Different graham crackers: You can play around with different types of graham crackers for a twist on the traditional. Chocolate graham crackers or even cinnamon graham crackers could add an extra depth of flavor.
- Add inclusions: Consider adding inclusions into the marshmallow layer. Mini chocolate chips, crushed cookies, or bits of toffee could add a fun crunch and flavor.
- Fruit layer: Add a layer of thinly sliced strawberries or bananas between the chocolate and marshmallow layers for a fruity variation.
- Drizzles: Once the S’mores are assembled and cut, drizzle the top with chocolate or caramel sauce for an extra touch of sweetness and a visually impressive finish.
- Ice cream: You could replace the marshmallow layer with your favorite ice cream flavor.

To store finished Frozen S’mores, individually wrap each bar in parchment paper or plastic wrap. Place the wrapped bars in an airtight container or zip-top freezer bag, and store them in the freezer. They’ll keep for up to three months but are best eaten within the first month. When ready to serve, let them soften at room temperature for about 15 minutes.
Be aware that the longer these Frozen S’mores are stored, the softer the graham crackers will become. This isn’t necessarily a downside–they take on a texture similar to the cookies in an ice cream sandwich, and enhance the overall creaminess of the treat!

Frozen S’mores
Ingredients
- 1 (5.9-ounce) package instant chocolate pudding mix see note 1
- 2-1/2 cups whole milk
- 1 (8-ounce) container frozen whipped topping defrosted, divided
- 5 ounces cream cheese softened, see note 2
- 6 ounces marshmallow creme see note 3
- 1/6 teaspoon salt
- 1/8 teaspoon vanilla extract
- 12 honey graham crackers broken in half
Instructions
- Line a 9×13-inch baking dish with parchment paper, leaving an overhang for easy removal. (Don’t skip lining the pan or these won’t work too well!)
- In a medium bowl, whisk together the pudding mix and milk until smooth. Add in 1/2 cup whipped topping and whisk until incorporated. Spread this pudding mix in an even layer on the bottom of the pan. Place in the freezer for now.
- In a large bowl, add softened cream cheese, marshmallow creme, salt, and vanilla. Use a hand mixer to beat until completely smooth. Add in the remaining whipped topping and gently fold with a spatula until well incorporated. Spread this mixture evenly over the chocolate layer. Cover tightly and place in the fridge until completely firm, about 8 hours or overnight.
- Use the overhanging parchment to remove the frozen filling and place on a cutting board. Place 12 halves of graham crackers evenly spaced on top. Using the graham crackers as a guide, slice into 12 squares (see note 4). Trim any excess off the frozen filling. Flip each square over and add another graham cracker to the other side. Enjoy!
