Foil Pack Ramen Noodles

Foil Pack Ramen Noodles is such a fun recipe that I’m excited to share with you all! As an outdoor enthusiast with a deep-seated passion for summer camping and foil-pack meals, I’ve enjoyed creating new foil-wrapped meal ideas. We’ve experimented with a wide range of meats, from chicken to pork, shrimp, and beef. Yet, incorporating perfectly tender and flavorful noodles into a foil pack remained elusive until now!

After several attempts and fine-tuning, this recipe has finally struck the perfect balance! It serves up wonderfully saucy and tender noodles, packed with an array of vegetables and juicy chunks of smoked sausage. These Foil Pack Ramen Noodles provide an exciting meal experience that’s also incredibly delicious and easy to prepare!

Ingredients In Foil Pack Ramen Noodles

Here’s a breakdown of the main ingredients in this recipe, along with some tips:

  1. Ramen noodles serve as the base of the dish. You can use any flavor of ramen because the seasoning packets are not used in this recipe. You can choose to either save the seasoning packets for a different recipe or discard them; using them in this recipe would interfere with the flavor we’re aiming for.
  2. Smoked sausage adds a smoky, hearty element to the dish. Use your favorite type of smoked sausage here.
  3. Frozen corn and shelled edamame (or peas) add texture and flavor to the dish. Plus no extra prep on your end is needed! Edamame is sold fresh or frozen in the store, but I typically use the frozen shelled soybeans since it’s hard for me to find fresh ones in my area. Don’t worry about thawing or boiling beforehand– they cook perfectly from frozen!

Foil Pack Ramen Noodles Sauce Ingredients

  1. Cornstarch: This is the thickening agent for the sauce. Make sure it’s fresh for best results– it can lose its effectiveness over time.
  2. Lite (low-sodium) soy sauce: Soy sauce gives the dish a salty, umami flavor. Using low-sodium soy sauce helps control the saltiness of the dish.
  3. Sriracha sauce: Use sriracha to give a spicy kick to the dish. While the quantity can be tailored to your heat tolerance, remember that reducing it may also diminish the overall flavor.
  4. Light brown sugar: Balance the saltiness and spiciness with a touch of sweetness. You can adjust the amount to personal preference.
  5. Chicken broth: Broth enhances the depth of flavor in the sauce. For a vegetarian foil-pack meal, you could substitute it with vegetable broth and vegetarian sausage! The quality of the chicken broth significantly influences the flavor of the sauce, which is why we prefer using Swanson® chicken broth for this recipe.
  6. Toasted sesame oil:  Be sure to use toasted sesame oil, not regular sesame oil, to add that trademark flavor to the sauce.
  7. Garlic paste and ginger paste: These add depth to the flavor profile.

SHORTCUTS

The Cooking “Shortcuts”

Here’s what we do to keep prep as short as possible on these Foil Pack Ramen Noodles:

  1. Use frozen vegetables that don’t require any additional preparation. We recommend shelled edamame and corn. They cook perfectly with the other ingredients in the foil pack and don’t require any advance preparation. 
  2. Take advantage of store-bought shortcuts. If you’d rather avoid chopping altogether, get pre-sliced green onions from the produce aisle of your supermarket along with refrigerated ginger paste and refrigerated garlic paste. Using these products helps assure an even distribution of these flavors in each packet. (If you use fresh ginger or garlic, they tend to settle at the bottom and may end up concentrated in one packet.) Alternatively, you can use Dorot’s® garlic and ginger cubes. These handy freezer staples offer crushed garlic and ginger that you can easily incorporate into this and other recipes when needed. Check to see if your local grocery store carries them; they’re typically located in the frozen vegetable section.
  3. Prepare the sauce in advance. While not necessarily a shortcut, if you make the sauce ahead of time and store it in the refrigerator, this dish will come together much faster at dinnertime!
  4. Opt for smoked sausage. Since smoked sausage is technically pre-cooked, all we need to do is heat it within the foil packs and allow it to absorb the delicious sauce flavors. Employing this protein reduces the cooking time and minimizes the prep work required beforehand.
  5. Soak the ramen. Rather than boiling water or pre-cooking the noodles, we just let them soak in hot tap water while we prepare the other components of the foil packs.

Foil Pack Ramen Noodles Recipe Tips

  1. Use heavy-duty aluminum foil: To avoid tearing, ensure food cooks evenly, and maintain a secure seal during cooking, it’s best to use heavy-duty aluminum foil. Spraying the foil with cooking spray can prevent food from sticking. We recommend using extra-wide heavy-duty foil for an easier assembly and packet-folding process.
  2. Soak ramen properly: Be sure to soak your ramen thoroughly according to the recipe instructions in this post to ensure it cooks properly in the foil pack.
  3. Fold carefully: When wrapping your foil packs, make sure you fold them properly to seal in the heat. Don’t press the foil too tightly against the food; leave some space to allow the steam to circulate inside the pack.
  4. Let packets rest before opening: Allow the foil packets to stand for a minute after removing them from the oven or grill. This helps the juices redistribute and the flavors meld.
  5. Be cautious of the steam when opening packets: Open the foil packets carefully! The steam being released can cause burns. Use tongs or oven mitts for extra protection.

QUICK TIP

Is it safe to cook with foil? According to the Centers for Disease Control and Prevention (CDC), any concerns regarding using foil in home cooking are largely based on myths and there are no substantial risks associated with its use. (Source and source).

Ingredients

Sauce

Packets

  • 3 packages (3 oz. each) ramen (instant) noodles (Note 4)
  • 13 oz smoked sausage, cut into half moons
  • 1 cup each: frozen corn and frozen shelled edamame (or frozen peas) (Note 5)
  • Optional: 3 green onions, sesame seeds, 1/4 tsp ground white pepper

Instructions

  • PREP: Preheat the oven to 400 degrees F. Tear off 3 large pieces of wide, heavy-duty foil and generously grease each piece with cooking spray. If using, prepare the green onions by thinly slicing and separating the bottom half from the top half.
  • SAUCE: For the sauce, combine the cornstarch and soy sauce in a liquid measuring cup and whisk until smooth. Add the remaining sauce ingredients and ¼ tsp ground white pepper (if using). Whisk the mixture until smooth, then microwave it for 1 minute.
  • RAMEN: Open the ramen packages and discard the seasoning packets (or save for another recipe). Break each ramen packet into 8 pieces (24 pieces in total). Place the broken pieces in a 9x13-inch pan in a single layer. Pour 4 cups of hot tap water over the ramen. Let ramen pieces soak for 2 minutes, flip, then soak for 2 more minutes. Drain the water.
  • PACKETS: Divide the drained ramen evenly between the 3 foil packets. Divide the smoked sausage evenly between each packet. Add ⅓ cup each of frozen corn and edamame to each packet. Divide the white parts of the green onions among each packet.
  • BAKE: Fold the packets, leaving an opening at the top. Give the sauce another good whisk, and then divide it evenly among the packets, about ⅓ cup per packet. Seal the packets completely. Place them on a sheet pan and bake for 15 minutes.
  • ENJOY: After baking, carefully open the packets and stir the contents really well. Add the top halves of the green onions and sesame seeds if using. Serve and enjoy!
