Preheat oven to 400°F. Tear off 3 large pieces of heavy-duty foil and grease with cooking spray. Slice green onions, separating the white and green parts.
Discard seasoning packets from ramen. Break each packet into 8 pieces. Place in a 9x13-inch pan. Cover with 4 cups of hot water. Soak for 2 minutes, flip, then soak for another 2 minutes. Drain.
Whisk together cornstarch and soy sauce until smooth. Add the rest of the sauce ingredients and whisk. Microwave for 1 minute.
Evenly divide drained ramen, smoked sausage, corn, edamame, and white parts of green onions among the 3 foil pieces. Fold up the packets, leaving an opening at the top.
Whisk the sauce again and pour about 1/3 cup into each packet. Fully seal the packets, leaving room for air to circulate.
Place packets on a sheet pan and bake for 15 minutes.
Carefully open the packets and stir gently. Add green parts of green onions and sesame seeds if using. Enjoy!

Note 1: Use extra-wide heavy-duty foil to prevent tearing and ensure even cooking. Spray with cooking spray to avoid sticking. I tested in regular foil and had inconsistent results.Note 2: Adjust to your heat preference. Reducing it may also reduce overall flavor.Note 3: Use refrigerated garlic and ginger paste for even distribution. Fresh garlic and ginger tends to concentrate in one packet.Note 4: Frozen shelled edamame works best. No need to thaw or boil before use.
