After 10 Years, I Finally Nailed This Starbucks Copycat!
I’ve been chasing the perfect Starbucks Cranberry Bliss Bar for years. Ever since I lived in Cleveland about 10 years ago, I’ve been trying to recreate it. The first time I made my own version, I remember being so disappointed by how dry and cakey it turned out.
Well, I finally cracked the code. And honestly? I like mine even better than Starbucks.
When I tasted the final version (the one I’m sharing here today), I immediately texted my sisters a photo and said, “This might be a top 5 dessert for me. You have to try these!”
I know I say “you HAVE to make this” basically every time I share a new recipe, but if you bake one thing this season, let it be these. And okay, sorry for how often I say that. 🙈

- Prep: Heat oven to 350°F and line an 8×8-inch pan with parchment.
- Brown Butter: Cook until golden and nutty, then cool slightly.
- Mix: Whisk in sugar, egg, extracts, salt, and ginger, then fold in flour, chocolate, and cranberries.
- Bake: Spread in pan and bake until golden and set.
- Frost: Cool completely, then top with frosting, cranberries, and white chocolate drizzle.

Store Cranberry Bliss Bars in an airtight container in the fridge for up to 5 days. Let them sit at room temperature for 10–15 minutes before serving for the best texture.
To freeze, place unfrosted bars in a single layer on a tray until firm, then transfer to a freezer-safe container with parchment between layers. Thaw overnight in the fridge before frosting and serving.

- 8 x 8-inch baking pan plus parchment paper
Ingredients
- 8 tablespoons unsalted butter cut to small cubes
- 1 cup light brown sugar packed (use soft/fresh sugar)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon orange extract
- 1 clementine or mandarin (1 teaspoon zest)
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 cup flour
- 1 cup white chocolate chips
- 1/2 cup dried sweetened cranberries (grab soft/fresh ones)
- 4 ounces cream cheese softened (full-fat, brick-style)
- 3/4 cup powdered sugar
- 1/4 teaspoon orange extract
- 1/4 teaspoon vanilla extract
- Tiny pinch salt
- 3 tablespoons dried sweetened cranberries coarsely chopped
- 3 tablespoons white chocolate chips
- 1/2 teaspoon coconut oil
Instructions
- Preheat oven to 350°F (175°C). Spray an 8×8-inch pan with cooking spray and line it with parchment paper, leaving an overhang for easy removal.
- Melt butter in a light-colored, wide saucepan over medium-high heat. Once melted, reduce to medium and stir constantly with a silicone spatula. Butter will bubble and foam. When it smells nutty and you see light-brown specks under the foam, quickly remove from heat and pour butter into a bowl, scraping all the bits from the pan. Let it cool for 5 minutes.
- Add the brown sugar to the cooled butter and whisk vigorously until the mixture resembles wet sand. Add the egg, vanilla, orange extract, orange zest, ginger, and salt, and whisk briskly until the mixture is very creamy and emulsified. Add the flour, white chocolate chips, and cranberries, then switch to a spatula to fold the dough until no dry streaks of flour remain. The batter will be thick.
- Spread the batter evenly into the prepared pan and smooth the top with a spatula. Bake for 25–27 minutes, or until the edges are lightly golden and the top is set.
- Remove from the oven and let the bars cool in the pan for 10–15 minutes. Use the parchment overhang to lift them out and transfer to a wire rack, then slide the parchment out from underneath. Let cool completely.
- Frosting: Microwave softened cream cheese in 10-second bursts (waiting 30 seconds between each) until easily stirred. In a large bowl, beat cream cheese, powdered sugar, orange extract, and vanilla until smooth and creamy, scraping sides as needed. Frost completely cooled bars and top with chopped cranberries.
- Add white chocolate chips and coconut oil to a small microwave-safe bowl. Microwave in 15-second bursts, stirring between each, until melted and smooth. Transfer to a zip-top bag, snip the corner, and drizzle over the bars.
- Let the drizzle set. Cut into 9 squares, then slice each diagonally to create 18 triangle-shaped bars.

How To Brown Butter
Browning the butter makes all the difference in these Cranberry Bliss Bars, so don’t skip it. Keep in mind that browned butter yields a little less than regular melted butter because some moisture evaporates as it cooks.
- Use a light-colored pan: This helps you see the color change clearly to avoid burning.
- Cut butter into pieces: Smaller pieces melt and brown more evenly.
- Stir constantly: Use a spatula to scrape the bottom so the milk solids don’t burn.
- Watch for color change: The butter will melt, foam, and then turn golden with brown bits at the bottom.
- Smell: When it smells toasty and nutty, it’s ready! Quickly remove from heat.
- Cool before using: Let it sit a few minutes to cool before mixing it into the batter.



















I just took these bars out of the oven and can’t wait to try them! However, in looking at the recipe again, to make the frosting, I noticed there wasn’t any baking soda or powder included in the batter. Is that correct? Hopefully they turn out okay.
No baking soda or powder. It’s a blondie base (similar to brownies) ๐

Super delish! I omitted the orange extract and zest and used almond extract instead and it was divine! If I were to make again, I would add shaved almonds on top too or maybe use dried cherries instead of cranberries
