Equipment

  • Regular-Sized Muffin Pan and Liners

Ingredients

  • ½ cup unsalted butter (COLD)
  • cup white, granulated sugar
  • ½ teaspoon vanilla bean paste (or 1 teaspoon vanilla extract)
  • teaspoon almond extract, optional
  • ¼ teaspoon salt
  • 1 cup (146g) all-purpose, white flour
  • 12 teaspoons seedless raspberry jam
  • Optional: powdered sugar

Instructions

  • PREP: Preheat your oven to 350°F (175°C). Line a regular-sized muffin pan with cupcake liners and lightly grease them with cooking spray.
  • COOKIE BASE: In a stand mixer fitted with the whisk attachment (or using a hand mixer), beat the cold butter and sugar on medium speed until the mixture becomes creamy (the consistency of peanut butter). Scrape down the sides of the bowl as necessary.
    Add vanilla extract, almond extract (if using), and salt. Mix through. Add flour, beating just until a thick dough forms. Be careful not to over-mix.
  • ASSEMBLY: Take a leveled 2½ teaspoons of dough for each muffin tin. Press it to form the base. Add 1 teaspoon of raspberry jam to the center of each base. Do not spread the jam or press it down. Crumble a leveled 1½ teaspoons of dough on top of the jam for each cookie. You should have enough dough for 10-12 cookies.
  • BAKE: Bake in the preheated oven for 18-22 minutes, or until the edges are lightly golden. Avoid over-baking. Remove from the oven and let the cookies cool in the tin for 5 minutes. Then, gently loosen the edges of the paper liners to prevent the jam from sticking and hardening.
    After 10 minutes, remove cookies from liners, and transfer to a cooling rack; allow to cool completely. If desired, dust with powdered sugar before serving.

    Wow!! My daughter and I baked these this weekend and they are absolutely divine. I had not baked cookies since making cookie boxes in December. These will definitely be in the boxes next year! They are simple yet elegant and the taste is out of this world. Definitely our new favorite cookie!
    P.S. We all agreed we had never seen the Costco cookie in our Costco runs but who cares, it does not belong in our house these cookies do! Thank you so much!
