Early last month I shared this fun Ernie-inspired peach smoothie bowl as part of my partnership with LACTAID® this year. And today I’m excited to bring you another fun sesame street character — Oscar the Grouch meets kale salad! Since my husband is lactose-intolerant, we always have plenty of LACTAID® on hand and it’s nice to have on hand when whipping together the creamy poppyseed dressing that this salad is tossed in. This salad has been one of our favorites of late. It’s hearty with lots of texture and loaded with good-for-you ingredients. It’s also perfect for this time of year — every ingredient screams Fall-time! The brussels sprouts, dried cranberries, pumpkin seeds, and kale are all staples in my home this time of year. The delicious poppyseed dressing calls for low fat LACTAID® milk. Here’s a quick re-cap about their products: What is LACTAID®? Overall they add a wonderful texture and great crunch to this salad. You can make your own roasted pepitas or buy some at the store. If you opt to buy them, make sure they’re roasted and salted (not raw). You can generally find them in the bulk section of a grocery store, or with other salad toppings like candied nuts, dried cranberries, etc. What is broccoli slaw? Broccoli slaw is a ready to eat blend of shredded broccoli, shredded carrots, and shredded red cabbage. It’s typically sold near other packaged lettuce or pre-prepared salads. If you aren’t able to find broccoli slaw at the store, I’d recommend cutting the broccoli florets from the stems. Next, thinly slice the broccoli florets with a knife and then use a large grater to grate the broccoli stems. FOLLOW ALONG! (Season to taste with salt and pepper, I add 1/4 teaspoon fine sea salt and 1/8 teaspoon pepper.) Taste and adjust any flavors to personal preference. (If you'd like a sweeter dressing, add an additional 1-2 tablespoons white sugar.) Stir in the poppy seeds. Store in an airtight container in the fridge until ready to serve (Dressing stays good for 1 week stored this way).SALAD: Combine the chopped kale, broccoli slaw, thinly sliced Brussels sprouts, and broccoli slaw in a large salad bowl. Pour 1/2 of the dressing over the salad greens. Toss the greens with tongs to coat in the dressing. Sprinkle the cranberries and pepitas over the salad. Lightly toss to combine and then add the rest of the dressing and toss.DECORATE: Cut the crusts off of a hearty slice of wheat bread and arrange as eyebrows. Cut out a circle of lactose-free cheese for eyes and then halve an olive to stick on top. Add lactose free cheese for the mouth. Enjoy!
