Costco’s Kale Salad is a crunchy mix of broccoli slaw, kale, Brussels sprouts, cranberries, and pepitas, all tossed in a zesty lemon poppy seed dressing!
Combine all the dressing ingredients, except the poppy seeds, in a small blender. Add 1/2 tespoon lemon zest. Process until combined. (Season to taste with salt and pepper; I add 1/4 teaspoon salt and 1/8 teaspoon pepper.) Taste and adjust any flavors to preference. (If you’d like a sweeter dressing, add an additional 1–2 tablespoons sugar.) Stir in the poppy seeds. Store in an airtight container in the fridge until ready to serve (Dressing stays good for 1 week stored this way).
Combine the chopped kale, broccoli slaw, and thinly sliced Brussels sprouts in a large salad bowl. Pour half the dressing over the salad greens. Toss the greens with tongs to coat in the dressing. Sprinkle the cranberries and pepitas over the salad. Lightly toss to combine, then add the rest of the dressing and toss.

Storage: Store leftovers in an airtight container in the fridge for up to 2 days. Keep the dressing separate and toss before serving to keep everything crisp.
