Big cluster granola filled with flavors and textures. A variety of nuts, toasted coconut, and chocolate-covered cranberries make the perfect additions in this sweet and crunchy granola.
One of the best traits my dad has passed down to me is a SERIOUS love for granola. It’s pretty amazing how much granola he consumes, and I’m not too far behind.
He buys bags and bags and bags of granola and transfers them to plastic cereal containers that fill up my parent’s pantry. Pretty much every single breakfast he has a bowl of frozen berries, yogurt, and loads of granola. And he snacks on it all the time.
When he came and visited us in last year in Ohio, I made sure to stock the pantry with granola. I made several different varieties and was certain I had made too much. Turns out I didn’t make enough as it was gone by day 2. (!!!) I’ve even given him batches of homemade granola for birthday or Father’s Day gifts and he’s always requesting more. Since I love it so much, I have worked and and experimented to try and come up with the best possible versions to make him when we get back to the states. And this one with the chocolate-covered cranberries, nuts, and sweet flavor is definitely going to be one of his new favorites!
For the chocolate-covered cranberries in this granola, I used dove Fruit cranberries. You may remember how obsessed I am with these chocolate covered cranberries when I made some healthier oatmeal cookies packed with them (and raved on about these “better for you” chocolate-covered fruit indulgences). And they are SO fantastic in this granola – just the perfect amount of chewiness and the touch of chocolate in the granola is divine.
Among some failures for granola creations, I’ve also had a few awesome successes! So far my two favorite granola versions I’ve made (toasted coconut with honey-almond flavor and peanut butter cup) have already been published here on the blog. And they are made frequently at my home. With this batch of granola, I wanted to experiment with more “add-ins” as well as making a granola with BIG clusters. Sticky, crunchy, delicious granola!
This is the winning granola if you love the big huge crunchy clusters. If you are a nut lover, enjoy toasted coconut, and love chocolate-covered dried berries than this is definitely going to be your favorite ever granola.

- 3 cups old fashioned oatmeal
- 3/4 cup slivered almonds
- 1/2 cup finely chopped peanuts
- 1/2 cup flaked coconut
- 1/3 cup light brown sugar lightly packed
- 1/3 cup + 1 tablespoon maple syrup
- 1/4 cup melted coconut oil
- 1/2 teaspoon salt
- 1 cup chocolate covered fruit cranberries
Preheat the oven to 325 degrees F.
In a large bowl, toss together the oats, almonds, peanuts, and coconut.
In another bowl, stir together the brown sugar, maple syrup, melted coconut oil, and salt until all ingredients are well incorporated and smooth.
Pour the wet into the dry and mix until all ingredients are well combined. You may need to knead the mixture a bit with your hands.
Spread the granola evenly over a large baking sheet.
Bake for 20-30 minutes (depending on the heat of your oven) making sure to flip and stir the granola around every 6-8 minutes.
Remove and allow the granola to harden and set up. (It may be soft and not very "granola-like", but it hardens as it dries out so be careful to not over-cook it). Mine generally takes about 22 minutes and the coconut and slivered almonds are a light brown color.
Once the granola is hardened, stir in the chocolate covered cranberries.
