Easy, Yet Impressive Cookies!

These Andes Mint Cookies look impressive and somehow manage to taste even better! The cookies themselves are soft, chewy, and richly fudgy, topped off with a creaminess from the mint chocolate.

I stumbled upon this idea on TikTok and had to try it. Just bake your favorite chocolate cookies, then press an Andes mint on each one right out of the oven. The chocolate softens from the warmth, and when you spread it, it forms the perfect cookie topping. Once it sets, you get this creamy, melt-in-your-mouth experience.

  • Chocolate Cookie Dough: Choose a dough that’s rich and fudgy like this Chocolate Cookies recipe. For a shortcut, try these Brownie Cookies which start with a mix! An even faster short-cut: buy pre-made chocolate cookie dough to bake at home.
  • Andes Mints: The key ingredient! They’re readily available in stores, especially during the holidays.

Tools Needed For Andes Mint Cookies

  • Butter Knife: For spreading the melted mints. A spatula can work too, but a bit less precise.
  • Silicone Liner: For more even cookie baking.
  • Cooling Rack: Prevents sogginess, helps set chocolate evenly through air circulation.

Instructions

  • COOKIE DOUGH: Follow the directions of your chosen chocolate cookie recipe.
  • BAKE: Bake the cookies as instructed in your recipe. Once baked, remove the cookies from the oven.
  • ADD MINTS: Allow the cookies to stand for 1 minute on the baking sheet after removing them from the oven. Then, gently place one unwrapped Andes mint on top of each warm cookie.
  • MELT & SPREAD: Let the Andes mints sit on the cookies for 5 minutes. The heat from the cookies will melt the mints. After 5 minutes, gently spread the melted chocolate over the cookie using a butter knife.
  • COOL: Allow the cookies to stand on the baking sheet for an additional 5 minutes. Then, carefully transfer them to a cooling rack. Let the cookies cool completely at room temperature until the chocolate is fully set. Enjoy!
