Thick and chewy Andes Mint Cookies have a rich chocolate base with minty chocolate on top. Surprisingly easy to make, all that minty flavor comes from just one ingredient—an Andes mint!

Easy, Yet Impressive Cookies!
These Andes Mint Cookies look impressive and somehow manage to taste even better! The cookies are soft, chewy, and fudgy, topped off with a creaminess from the mint chocolate.
I stumbled on this idea on TikTok and had to try it. Just bake your favorite chocolate cookies, then press an Andes mint on each one right out of the oven. The chocolate softens from the warmth, and when you spread it, it forms the perfect cookie topping. Once it sets, you get this creamy, melt-in-your-mouth cookie.
They’re a unique and delicious addition to any cookie exchange or dessert table!
Andes Mint Cookies Ingredients
- Chocolate Cookie Dough: Choose a dough that’s rich and fudgy like these Chocolate Cookies. For a shortcut, try these Brownie Cookies that start with a mix! An even faster short-cut: buy pre-made chocolate cookie dough to bake at home.
- Andes Mints: The main flavor! They’re easy to find in stores, especially around the holidays.
Tools Needed For Andes Mint Cookies
- Butter Knife: Use to spread the melted mints. A spatula can work too, but a bit less precise.
- Silicone Liner: For more even cookie baking.
- Cooling Rack: Keeps cookies from getting soggy and helps the chocolate set evenly by letting air flow underneath.
How To Make Andes Mint Cookies (Tips)
- Chill Dough: If using homemade dough, chilling helps the cookies keep their shape.
- Avoid Over-baking: Take cookies out when just set. They’ll firm up as they cool.
- Place Mints Quickly: Place mints on top one minute after baking so they melt right.
- Spread Gently: Spread the mint after it softens so the cookie doesn’t break.
- Cool on Sheet: Let cookies sit on the baking sheet a bit before transferring to a rack.
- Let Chocolate Set: Let the chocolate cool at room temp until it hardens.
