Pass The Pickles, Please!

Everyone in my family loves pickles. Just last week, we were out on the back deck planning the week ahead and ended up downing an entire container of Grillo’s while just passing them around and chatting haha.

And while we’re on the topic of Grillo’s (not sponsored), I honestly think they’re the best dill pickles out there. We’re obsessed with their spears and pickle chips, and I can’t seem to keep them stocked in the fridge!

Naturally, the minute I saw fried pickle dip trending online, I had to try it! After playing around with the ratios, I found the perfect combo: cream cheese, mayo, and sour cream. Trust me, it’s worth it. This is easily one of the tastiest dips I’ve ever had. Try it with wavy potato chips and get ready for a new obsession!

Fried Pickle Dip Ingredients

Ingredient(s)Tip
Cream cheese, sour cream, mayonnaiseUse full-fat for the best creamy texture and flavor. Make sure the cream cheese is fully softened so the dip turns out smooth, not lumpy.
Dill picklesDice fine and then pat dry to avoid excess moisture in the dip.
Fresh dill, chivesChop finely for even flavor in every bite. Freeze-dried herbs work great too; they’re budget-friendly and save time.
Garlic powder, black pepperAdd to taste; these boost flavor without overpowering the pickles.
Panko breadcrumbs, butterToast in butter until golden for that crispy “fried pickle” crunch!

Storage

Store fried pickle dip in an airtight container in the fridge without the panko topping. It thickens and becomes more flavorful as it sits. Add the crispy topping right before serving.

Fried Pickle Dip

Fried Pickle Dip brings all the flavor of deep-fried pickles in one creamy, scoopable bite. Don’t forget the chips!
Prep Time: 15 minutes
Chilling Time: 30 minutes
Total Time: 45 minutes
Servings: 12 servings

Ingredients

Base
  • 8 ounces cream cheese softened (brick-style), see note 1
  • 1/2 cup sour cream
  • 1/2 cup mayo
  • 1 tablespoon pickle juice (from pickle container)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper or to taste
Mix-Ins
Crispy Topping (Optional)
For Serving
  • Potato chips (I love wavy!)
  • Assorted veggies like bell peppers, carrots, celery, etc.

Instructions

  • Melt butter in a nonstick skillet over medium heat. Add panko and stir until golden brown. Transfer to a bowl and let fully cool.
  • In a large bowl, add very soft cream cheese (see note 1), sour cream, mayo, pickle juice, garlic powder, and pepper. Beat with a hand mixer for 1 minute until smooth.
  • Use a spatula to stir in the diced pickles, dill, and chives until fully combined.
  • Cover and refrigerate for 30 minutes to allow the flavors to meld and the dip to thicken.
  • Spoon the dip into a shallow serving dish. Sprinkle toasted panko on top right before serving.

Recipe Notes

Note 1: If the cream cheese isn’t fully softened, the dip will be lumpy. Cut it into chunks and microwave in 15-second bursts until very soft.
Storage: Store the dip in an airtight container in the fridge without the topping. It thickens and develops more flavor as it sits. Add the panko just before serving.

Top Tips For Making Fried Pickle Dip

  1. Soften cream cheese fully: Let it sit at room temp for 45–60 minutes until very soft.
  2. Or, microwave in a hurry: Cut into chunks and warm in 10-second bursts until soft.
  3. Use a hand mixer: It blends the base to the perfect smooth and creamy consistency.
  4. Pat pickles dry: This keeps the dip thick and prevents it from getting too diluted.
  5. Chill before serving: Allows flavors to meld and the dip to thicken nicely.

How To Use This Dip!

Endless ways to serve and love this Fried Pickle Dip:

  • Wavy potato chips: The crunch + salt pairs perfectly with the creamy dip.
