Ingredients
Here’s what you’ll need to make BBQ Chicken Pizza:
- Pizza Dough: Store-bought is quick and easy, or make your own for more flavor.
- BBQ Sauce: Make your own or use your favorite store-bought sauce. I like Baby Ray’s!
- Chicken/Pork: Rotisserie chicken is quick and easy, or use store-bought BBQ pulled pork.
- Red Onion: Thin slices give a mild crunch; skip if preferred.
- Pineapple: Fresh pineapple adds sweetness and texture.
- Monterey Jack & Mozzarella: The mix makes the pizza extra cheesy and creamy.
- Bacon: Crispy bacon adds salty crunch. Use microwave bacon for quick prep or bake it.
- Jalapeño: Add for heat, or skip if you prefer no spice.
- Cilantro: Optional, but adds a nice fresh flavor to the BBQ Chicken Pizza.
Quick Tip
Pineapple on pizza is pretty divisive—you’re either into it or not! It became popular around the time Hawaii became the 50th state in 1959, thanks to the island’s pineapple connection. Who knew it’d cause so much debate?!
How to Make BBQ Chicken Pizza
- Prepare Pan: Grease a 12-inch pizza pan and sprinkle with cornmeal. This will give a nice crunchy crust.
- Shape Dough: Spread out the pizza dough on the pan.
- Add Sauce: Evenly spread BBQ sauce over the dough, leaving a small border for the crust.
- Add Toppings: Top with chicken (or pork), onion, pineapple, cheese, bacon, and jalapeño.
- Bake: Bake according to pizza dough instructions.
- Finish & Serve: Once baked, top with cilantro if using, slice, and serve.

- Prep Ahead: Shred rotisserie chicken in advance and store it in the fridge for quicker assembly.
- Even Sauce Distribution: Spread BBQ sauce evenly over the dough—too much sauce can make the BBQ Chicken Pizza soggy!

Ingredients
- Cooking spray
- 2 tablespoons yellow cornmeal
- 1 batch pizza dough homemade or store-bought, for a 12-inch round pizza
- 1/3 cup BBQ sauce
- 1 cup rotisserie chicken shredded, or BBQ pulled pork
- 1/4 of a small red onion optional
- 1/4 cup fresh pineapple chopped to small pieces
- 1/2 cup shredded Monterey Jack cheese see note 1
- 1/2 cup shredded Mozzarella cheese see note 1
- 3 slices cooked bacon diced, optional; microwave bacon works great
- 1 jalapeño pepper thinly sliced, optional
- Fresh cilantro for topping, optional
Instructions
- Follow pizza dough directions for preheating oven. Lightly grease a 12-inch pizza pan with cooking spray. Sprinkle cornmeal evenly over the pan and tap off any excess.
- Spread pizza dough onto the prepared pan, forming a 12-inch round.
- Spread BBQ sauce evenly over the dough, leaving a small border for the crust. Top with shredded chicken (or pork), red onion slices, pineapple, and jalapeños if using. Sprinkle Monterey Jack and mozzarella evenly on top. Add crumbled bacon if desired.
- Follow pizza dough package instructions for baking time and temperature.
- Once baked, remove pizza from oven and top with fresh cilantro, if using. Slice and serve.

I’m a crazy pizza fan like yourself….who isn’t lets be honest?! Usually i’m all for traditional pizza flavors meaning nothing other than tomato sauce, but Chelsea, you sure sold me on this one!
