I did not set out to become so attached to cooking everything on a single sheet pan or in one big skillet… but here we are. Now I rely on them for my dinners literally all the time. They’re the meals I make when life is busy, the kitchen is already a mess from the day, and I still want something that tastes really good and feels like a real dinner.
Over the years, this little collection has grown into some of our most repeated meals. Lots of flavor, perfect texture, bright color, and recipes that feel a little impressive without being complicated. If dinner needs to be simple but still exciting, this is where I start.

Sheet Pan Sausage and Veggies
Smoked sausage and colorful veggies get tossed with one of my absolute favorite seasoning blends, then roasted until tender with golden edges.

French Dip Sliders
I have made this one pan dinner recipe more times than I can count. Soft rolls, layers of roast beef and melty provolone, a buttery topping baked until golden, and plenty of warm au jus for dipping.

Sheet Pan Chicken and Veggies
Garlic, lemon, and a generous handful of Parmesan over tender chicken and roasted veggies. I always make extra because the leftovers taste even better the next day.

Lightly breaded chicken coated in garlicky lemon butter and Parmesan, roasted alongside tender asparagus, and finished with that sweet-tangy lemon drizzle that makes you want to swipe the pan clean.

Balsamic Chicken and Veggies
The chicken soaks up a simple balsamic marinade, roasts alongside whatever veggies I have on hand, and that extra drizzle of glaze at the end pulls it all together in the best way. It’s exactly why I love one pan dinner recipes so much.

Italian Sausage and Veggies
This one feels like a big, colorful Italian roast. Juicy sausage, tender potatoes, and plenty of veggies get coated in a garlicky herb blend. Then it’s all roasted until caramelized and finished with a generous handful of Parmesan that melts right into everything.

Sausage Tortellini Bake
I combined two of my most-loved comfort dinners into this one, and wow… it’s a keeper. Creamy, cheesy tortellini with juicy chicken, sun-dried tomatoes, and spinach all tucked into the most flavorful sauce that tastes like something you’d order at a restaurant.

Dumpling Dinner
I kept seeing this everywhere and finally gave it a try. All I can say is, I should’ve tried it so much sooner. Dumplings, a creamy coconut curry sauce, and a topping of chili crunch make a dish that is saucy, cozy, slightly spicy and impossible to stop eating.
