How To Make Ritz Cracker Peanut Butter Cups

  • Prep: Line the tray with parchment paper; preheat oven to 250°F.
  • Sandwich: Place peanut butter cups between cookies/crackers.
  • Bake: Only bake for 2.5 minutes at 250 degrees; then press and chill.
  • Melt chocolate: Microwave with oil, stirring often. Don’t overheat or the chocolate could become grainy.
  • Dip: Coat the sandwiches in chocolate, removing the excess.
  • Set: Place on parchment to let the chocolate harden.

Chocolate Melting Tips

  • Short bursts: Microwave in 15-second intervals, stirring in between.
  • Low heat: To prevent scorching, aim for gentle warming.
  • Consistent stirring: The stirring process ensures an even melting and smooth texture.
  • Add oil: A bit of coconut or vegetable oil creates a glossy finish and easier coating.
  • Avoid water: Even a small drop can cause chocolate to seize.

Recipe Notes

Note 1 - Chocolate:ย We recommend chocolate made for melting like good qualityย baking barsย (such as Baker's, Lindt, or Ghiradelli) or good qualityย melting wafers/chips (such as Ghiradelli) for best results. (Both bars and melts are found in the baking aisle of the store--we like using melts best for ease!). Use whatever flavor of chocolate you like best!
Microwaving tip: Avoid scorching the chocolate by melting it in short bursts and stirring frequently. The chocolate should just get warm enough to melt smoothly and remain at room temperature once melted.
