Foil Pack Ramen Noodles is an explosion of flavors, all conveniently packed into a single foil package. The dish unites the umami-rich, spicy, and slightly sweet notes of a quick homemade stir-fry sauce with the smokiness of sausage, the freshness of veggies, and the comforting familiarity of ramen noodles.
Optional: 3 green onions, sesame seeds, 1/4 tsp ground white pepper
Instructions
PREP: Preheat the oven to 400 degrees F. Tear off 3 large pieces of wide, heavy-duty foil and generously grease each piece with cooking spray. If using, prepare the green onions by thinly slicing and separating the bottom half from the top half.
SAUCE: For the sauce, combine the cornstarch and soy sauce in a liquid measuring cup and whisk until smooth. Add the remaining sauce ingredients and ¼ tsp ground white pepper (if using). Whisk the mixture until smooth, then microwave it for 1 minute.
RAMEN: Open the ramen packages and discard the seasoning packets (or save for another recipe). Break each ramen packet into 8 pieces (24 pieces in total). Place the broken pieces in a 9x13-inch pan in a single layer. Pour 4 cups of hot tap water over the ramen. Let ramen pieces soak for 2 minutes, flip, then soak for 2 more minutes. Drain the water.
PACKETS: Divide the drained ramen evenly between the 3 foil packets. Divide the smoked sausage evenly between each packet. Add ⅓ cup each of frozen corn and edamame to each packet. Divide the white parts of the green onions among each packet.
BAKE: Fold the packets, leaving an opening at the top. Give the sauce another good whisk, and then divide it evenly among the packets, about ⅓ cup per packet. Seal the packets completely. Place them on a sheet pan and bake for 15 minutes.
ENJOY: After baking, carefully open the packets and stir the contents really well. Add the top halves of the green onions and sesame seeds if using. Serve and enjoy!

Note 1: Heavy-duty aluminum foil: To avoid tearing, ensure food cooks evenly, and maintain a secure seal during cooking, it's best to use heavy-duty aluminum foil. Spraying the foil with cooking spray can prevent food from sticking. We highly recommend using extra-wide heavy-duty foil for an easier assembly and packet-folding process.Note 2: Sriracha: While the quantity can be tailored to your heat tolerance, remember that reducing it may also diminish the overall flavor.Note 3: Garlic and ginger: To simplify the process, we use refrigerated garlic paste and ginger paste. This helps guarantee an even distribution of these flavors in each packet. (If you use fresh ginger or garlic, they tend to settle at the bottom and may end up concentrated in one packet.) Alternatively, you can use Dorot’s® garlic and ginger cubes.Note 4: Ramen: Discard the seasoning packets (or save for another recipe) and just use the noodles. 9 ounces (3 packets) is perfect for this recipe. Note 5: Edamame: Edamame is sold fresh or frozen in the store, but I typically use frozen shelled soybeans since it’s hard for me to find fresh in my area. Don't worry about thawing or boiling beforehand-- they cook perfectly from frozen! Can't find edamame? Use frozen peas instead.
