This Virgin Mojito is a refreshingly light drink made with fresh mint, lime juice, simple syrup, club soda, and ice. It’s easy to make, full of flavor—without tons of calories or alcohol!
Place mint leaves in a glass; pour fresh lime juice and simple syrup (see note 1) on top of the mint. Use a muddler or the handle of a sturdy wooden spoon to press down on the mint and release its flavor (see note 2). Using your dominant hand, press down and twist lightly 3–4 times. Add in club soda, ginger ale, or sparkling lime water. Fill up the glass with ice and stir. If desired, garnish with a slice or wedge of lime. Serve immediately!

Note 1: Simple syrup is just equal parts water and granulated sugar. Combine equal parts of both (I do 1/2 cup of each) in a small pot over medium-high heat. Stir until the sugar is completely dissolved, then cool completely. Store leftovers in an airtight or sterile container in the fridge for up to a month. Note 2: Don’t have a muddler? Use the handle of a sturdy wooden spoon or ladle.Storage: Store the simple syrup in the fridge in an airtight container for up to a week. Keep the lime, mint, and club soda separate, and assemble the drink fresh when ready to enjoy for the best flavor and fizz.
