1/2teaspoongrated lemon zest
2tablespoonswhite granulated sugar
Salt and pepper

Instructions
DRESSING: Combine all of the ingredients, except the poppy seeds, in a small blender jar and process until combined. (Season to taste with salt and pepper; I add 1/4 teaspoon fine sea salt and 1/8 teaspoon pepper.) Taste and adjust any flavors to personal preference. (If you'd like a sweeter dressing, add an additional 1-2 tablespoons white sugar.) Stir in the poppy seeds. Store in an airtight container in the fridge until ready to serve (Dressing stays good for 1 week stored this way).
SALAD: Combine the chopped kale, broccoli slaw, thinly sliced Brussels sprouts, and broccoli slaw in a large salad bowl. Pour 1/2 of the dressing over the salad greens. Toss the greens with tongs to coat in the dressing. Sprinkle the cranberries and pepitas over the salad. Lightly toss to combine and then add the rest of the dressing and toss.
