Let the frozen pineapple chunks warm up at room temperature for a minute for easier blending. Optionally, chill glasses ahead of time.
Combine all ingredients in a high-powered blender in the order listed. Add 1 up to 2 tablespoons freshly squeezed lime juice. Blend until smooth and frosty.
Taste and adjust as necessary. Pour into chilled glasses and garnish with pineapple slices, lime slices, and Maraschino cherries, if desired. Serve immediately.
Notes
Note 1: Ensure the pineapple juice is 100% pure and not diluted with water.Note 2: Coco Real Cream of Coconut is recommended for its flavor and ease of use (not coconut cream). Available in most grocery stores, typically in the cocktail mixers or international foods aisle.Note 3: Serving suggestions: pineapple or lime slices and/or Maraschino cherries.Storage: This drink is best enjoyed fresh since the texture changes when stored. If you have leftovers, keep them in an airtight container in the fridge for up to a day, but it’s best to make only what you’ll drink.
