One Pan Dumpling Dinner is the internet’s latest obsession! Simple to prep, full of flavor, and packed with great texture; it’s the ultimate weeknight dinner.
Heat oven to 400°F. Lightly grease a 9x13-inch baking dish.
In the 9x13-inch pan, whisk together the coconut milk, garlic paste, ginger paste, curry powder, red curry paste, coriander, chili powder, salt & pepper (I add 1/4 tsp each), lime juice, rice vinegar, and soy sauce until smooth.
Stir in the spinach, then arrange the frozen wontons evenly in the sauce. Press them down gently so they’re mostly coated in sauce.
Bake, uncovered, for 20 minutes.
Remove from the oven, drizzle toasted sesame oil on top, stir gently, and flip the wontons so they’re fully covered in sauce. Taste and adjust for seasoning.
Top with cilantro, green onions, sesame seeds, and a good drizzle of chili crunch. Serve immediately as-is or over rice.
Notes
Note 1: Use frozen chicken or pork wontons/dumplings (no need to thaw). Use wontons you know you love the flavor of. They make a huge difference.Storage: Lift wontons out of the sauce (slotted spoon) and store separately in airtight containers. Reheat sauce until hot, then add wontons back in before serving so they don’t bloat.
