3tablespoonsolive oil
2tablespoonsHidden Valley® Ranch Seasoning Mix
1tablespoonunsalted butter,melted
6slicescenter-cut bacon
Fresh chives or green onions,optional
Sharp cheddar cheese, freshly shredded,optional
Instructions
Preheat the oven to 400 degrees F.
Thoroughly wash and scrub the potatoes and then dry. Halve the potatoes (quarter especially large potatoes) so all pieces are roughly the same size.
Pour the potatoes onto a very large sheet pan and add in the olive oil, ranch seasoning mix, and melted butter.
Thoroughly mix the potatoes with this mixture until the seasoning mix is completely "absorbed" into the potatoes (you no longer see any white from the seasoning). Once the potatoes are well mixed, spread them into one even layer avoiding any overlap. If the potatoes are overlapping they will steam instead of getting a nice roast.
Place in the oven for 15 minutes. Meanwhile, cook and crumble the bacon.
Remove the potatoes and flip around. Cook for another 15-20 minutes or until fork tender.
Remove and toss with the bacon bits and if desired freshly chopped chives or green onions. Taste and add any additional salt or pepper if needed (I think the seasoning mix usually covers the bases pretty well!) We also like adding a small handful of grated cheese on top of the hot potatoes (mix it in to get a bit melty) -- totally optional, but delicious!
