Creamy Pesto Tomato Pasta

  • 12 ounces pasta of choice
  • 2 cups broccoli
  • 1/4 cup prepared pesto
  • 1 cup heavy cream
  • 1/2 cup sun dried tomatoes drained
  • 1/3 cup freshly grated Parmesan
  • Salt and pepper
  • 1/4 cup pine nuts


  1. Prepare the pasta according to package directions. Drain and set aside.
  2. Steam the broccoli and mix with the pasta.
  3. Combine the pesto and heavy cream in a skillet over medium heat for a few minutes. Lower the heat, simmer, and stir occasionally until slightly thickened. Stir in the sun-dried tomatoes, freshly grated Parmesan, salt and pepper.
  4. Toss the sauce over the pasta and broccoli.
  5. In a small saucepan over low heat, place the pine nuts. Lightly toast them until fragrant by stirring them over the low heat for about 2-3 minutes.
  6. Top the pasta with the toasted pine nuts and an extra sprinkle of Parmesan cheese if desired.
  7. Serve and enjoy immediately.
