Panini Sandwich Recipes are an easy way to upgrade lunch, and this one tops my list! Think crisp bread, turkey, pesto, provolone, avocado, peppers, and arugula.

Heat a panini press according to the manufacturer’s directions.
Lightly brush the outside of both slices with olive oil or softened butter.
Spread mayo on one inside cut side of the bread and pesto on the other.
Layer the ingredients in this order: 2 slices provolone, turkey, roasted red peppers (patted dry), avocado (seasoned with a light sprinkle of salt and pepper), arugula (drizzled with a little olive oil), and the remaining 2 slices of provolone. Top with the remaining bread slice.
Place the sandwich in the heated panini press. Gently close the press and cook for 3-5 minutes, or until the bread is crisp and golden and the cheese has melted.
Remove the panini from the press, let it cool for 1–2 minutes, then slice and enjoy.

Note 1: No Panini Press? Many Panini Sandwich Recipes can be made in a cast-iron skillet or on a griddle. Place the sandwich in the hot pan, then press it down with another heavy skillet or a foil-wrapped brick. Cook until golden, flip, and repeat.Note 2: Use a Good Pesto. Pesto can make or break this sandwich, in my opinion! Make your own or use one you already love. Rana's is my favorite store-bought option.Quick Tip: Don’t Overfill. Keep the fillings in an even layer so the sandwich presses neatly and heats all the way through.Storage: Paninis are best enjoyed hot from the press while the bread is crisp and the cheese is perfectly melted.
