In a large bowl, combine all ingredients listed under “Dressing.” Season to taste. I start with 1/4 teaspoon salt and 1/8 teaspoon pepper. Whisk until completely smooth.
Add all the ingredients listed under "Salad" on top. Gently fold with a spatula to combine until salad ingredients are nicely coated in the dressing. Taste and adjust.
Dish it up with your choice: on lettuce leaves, on toasted bread with avocado and lettuce, or toasted mini Naan (my fave!) with avocado and lettuce. Enjoy right away!

Note 1: My favorite way to serve this is on toasted mini naan with avocado and lettuce. It’s also great on toasted wheat bread, in lettuce cups, or with crackers.Storage: Keep in an airtight container in the fridge for up to 3 days. Give it a quick stir before serving. Don’t freeze.
