Note 1: These potatoes tend to stick as they crisp up. A sharp metal spatula helps lift and flip them cleanly. If you don’t have one, line the pan with parchment paper. They’ll be a little less crisp, but much easier to remove.
Storage: These potatoes are best fresh while the edges are crisp. For leftovers, let them cool fully, then store in an airtight container in the fridge for up to 4 days. Reheat on a sheet pan in a hot oven or in the air fryer to bring back the crisp. Skip the microwave, it softens the edges.
