Remove cream cheese from packaging and place on a microwave-safe plate. Microwave for 15 seconds. Flip and microwave another 10 to 15 seconds, until softened but not melted. (Time will vary depending on your microwave.)
Add softened cream cheese to a large bowl. Beat with a hand mixer until completely smooth and lump-free, about 1 minute. Run a spoon under hot water and dry it off, then use it to scoop the marshmallow creme. Add to the bowl along with 2 tablespoons fresh lime juice and the coconut extract if using. Beat until smooth and creamy.
Cover tightly and refrigerate for about 1 hour, or until fully chilled. Serve with your favorite fruit or dippers. Make sure fruit is completely dry before serving, or the dip may slide off.

Note 1: Increase coconut extract to taste keeping in mind that the flavor deepens as the dip sits. You can also swap with vanilla, orange, or lemon extract.Storage: Store tightly covered in the fridge for up to 7 days. If separation occurs, stir to recombine.
