The Turkey Bacon Avocado Salad brings together tender turkey and crispy bacon with creamy avocado and fresh greens, topped off with the most amazing balsamic dressing!
PREP: If using bacon, cook it until crisp and then chop it. Prepare the romaine (chop, wash, very thoroughly dry). Prep veggies by slicing the red onion, halving the tomatoes, and cutting the cucumbers into half-moons. Also, chop the avocado into bite-sized pieces.
DRESSING: Combine all of the ingredients into a small blender jar/bottle. Season to taste (I add 1/2 tsp salt & 3/4 tsp pepper). Blend until smooth and emulsified. Transfer to mason jar and refrigerate until ready to use. Shake well again before using.
ASSEMBLE: Combine all of the salad ingredients in a large bowl.
ENJOY: If you anticipate having leftovers, store the salad and dressing separately. Right before serving, add dressing to salad. Add dressing gradually and to personal preference; you may not need/want to use it all at once.

Note 1: If washing the lettuce, be sure to thoroughly dry lettuce before using.Note 2: To remove the "bite" of red onion, soak it in cold water for about 10 minutes, then drain and use as desired.
