Spring has sprung! With Easter right around the corner, it's the perfect time to start planning your holiday treats. If you're looking for a fun and festive snack that's both delicious and adorable, then you'll love this Easter Snack Mix. This recipe is inspired by classic s'mores, with a combination of milk chocolate, bunny graham crackers, spring M&M's, and marshmallows. And the best part? It's topped off with a white chocolate drizzle and Easter sprinkles-- the perfect finishing touch!
PREP BAKING SHEET: Line a large baking sheet with parchment paper, a silicone liner, or wax paper. Don't skip this!
MELT CHOCOLATE: Add milk chocolate and 1 tsp. vegetable oil to a microwave-safe bowl. Microwave for 30 seconds on high, stir. Microwave in 10 second increments, stirring between each, until chocolate is just melted. Do not overheat chocolate.
SPREAD CHOCOLATE: Spread ¾ of the melted chocolate (just eyeball it) onto the prepared sheet pan directly on the parchment paper. Spread with a silicone spatula in an even and smooth layer. It’s easiest to hold the paper down with one hand and pull the spatula down and away from the hand holding the paper. Spread to roughly 8×12 inches.
SNACK MIX: Working quickly, top the chocolate with the bunny grahams, M&M's, and dehydrated marshmallows. Spread these ingredients evenly across the chocolate, pressing everything gently into one layer that touches the chocolate. Try to get all the toppings to stick to the chocolate or they'll fall off later.
DRIZZLE: If your remaining chocolate in the bowl has cooled, microwave for another 10-20 seconds. Pour melted chocolate into a piping bag or a sandwich bag and snip a tiny bit of the corner off to create a piping bag. Drizzle generously over top snack mix.
WHITE CHOCOLATE DRIZZLE: Melt white chocolate and remaining 1/2 tsp. vegetable oil in the microwave. Transfer melted chocolate into a piping bag or a sandwich bag and snip a tiny bit of the corner off to create a piping bag. Drizzle generously over the snack mix. Immediately sprinkle with Easter sprinkles, if desired.
CHILL: Refrigerate until the mix has completely hardened. Break into clusters and enjoy! Return clusters to a bag or airtight container and store them in the fridge (it becomes melty/falls apart at room temperature).

Note 1: Chocolate: Choose high-quality chocolate chips for the best flavor for this snack mix. Use a brand that you like; brands like Ghirardelli or Guittard are great options. Milk chocolate is used in this recipe to keep with the traditional s'mores flavor, but you can use semi-sweet or dark chocolate (or a mix of the two) if you prefer. (This recipe is a great way to use up any leftover bags of chips you may have in your pantry!)Note 2: Dehydrated marshmallows: These small, freeze-dried pieces of marshmallow have a crispy texture and deliver the marshmallow flavor without getting stale or squishy like regular marshmallows. You can often find them in the grocery store near hot chocolate mixes or order them online! If you can't find these, just leave them out. We didn't like regular marshmallows in this mix.
