Get ready for the ultimate pizza experience without the wait! This easy-peasy, no-yeasty Pan Pizza recipe is the perfect solution for those nights when you're craving pizza but don't have the time (or patience) for traditional dough rising. With a quick bread crust consistency, sheet pan pizza packs a delicious punch of cheesy, savory flavors that will satisfy the taste buds of both kids and adults alike.
PREP: Generously grease a 9x13-inch metal pan with cooking spray and then line with parchment paper, leaving an overhang for easy removal. Preheat the oven to 350 degrees F.
DOUGH: In a large bowl stir together the flour, salt, garlic powder, Italian seasoning, baking powder, and baking soda. In a separate medium-sized bowl, briskly whisk together the egg, sour cream, buttermilk, and 1/4 cup olive oil until smooth. Pour wet into dry and mix with a wooden spoon to form a shaggy wet dough (don't over-mix). Add in 1 cup Cheddar cheese and 1/4 cup mozzarella and gently stir through.
ASSEMBLE: Spread the dough evenly into the bottom of the prepared pan. This will take some patience, but try to get it as even as possible. Press the dough to the edges of the pan. Use a spoon to evenly spread the pizza sauce on top, leaving a 1/2-inch border around the edges. Sprinkle on the remaining 1-1/2 cups Cheddar and 1/3 cup mozzarella evenly on top. Add pepperoni (or other toppings) if desired.
BAKE: Bake in the fully heated oven for 25 minutes. Then remove, cover the pan with foil (or just plop a flat cookie sheet on top) and bake for 15-20 more minutes. Remove the pizza from the oven and let cool for 5 minutes. Use the paper overhang to pull the pizza out and onto a cooling rack. Use a microplane to grate Parmesan cheese all over (to taste) and top the pizza with fresh basil if desired. Drizzle on the remaining 1/2 tablespoon oil. Cut into slices and enjoy!

Notes
Note 1: Cheese: For the best flavor, use sharp or extra-sharp Cheddar cheese in this recipe. With mild Cheddar, you may find the flavor bland or lacking. It's important to grate the cheese fresh, as pre-grated packaged cheese may not melt as smoothly. A food processor with the grating attachment can make grating the cheese a quick and easy process. When measuring the cheese, gently pack it into the measuring cup filling to the top to ensure the correct amount.Note 2: Pizza sauce: Use a high-quality pizza sauce. This makes a big difference in the overall flavor. Our favorite is Rao's pizza sauce!
