For 1 Virgin Mojito

  • 10 fresh large mint leaves
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons simple syrup (Note 1)
  • 1/2 cup club soda, ginger ale, or sparkling lime water (Sparkling lime water is my favorite!)
  • Plenty of ice
  • Optional garnish: lime wedge or slice of lime

  • Place the mint leaves in a glass; pour the fresh lime juice and simple syrup (See Note 1) right on top of the mint. Use a muddler to press down on the mint and release its flavor (see Note 2). Using your dominant hand, press down and twist lightly 3-4 times. Add in the club soda, ginger ale, or sparkling lime water. Fill up the glass with ice and then stir. Garnish, if desired, with a slice or wedge of lime and then serve immediately!

Note 1: Simple syrup is just equal parts water and white granulated sugar. Combine equal parts of both (I do 1/2 cup of each) in a small pot over medium-high heat. Stir until the sugar is completely dissolved and then cool completely. Store leftovers in an airtight or sterile container in the fridge for up to a month.
Note 2: Don't have a muddler? Use the handle of a sturdy wooden spoon or ladle.
