These S'moresBars can be prepared in 15 minutes or less and don't require any baking! They consist of graham cracker-flavored cereal, soft miniature marshmallows, and are studded with milk chocolate chips.
PREP: Generously grease a 9x13-inch pan and set aside. Place the cereal in a very large bowl and set aside.
MARSHMALLOW MIXTURE: In another very large microwave-safe bowl, add 5 cups miniature marshmallows, 1 and 1/2 cups chocolate chips, cubed butter, and corn syrup. Stir and then place in the microwave for 2-4 minutes, removing to stir every 20 seconds. When you remove the mixture every 20 seconds, stir for about 15-20 seconds, making sure to really scrape the bottom, and then return to the microwave. Microwave until the mixture is just melted and smooth; don't heat more than needed.
POUR OVER CEREAL: Once the mixture is smooth, stir in the vanilla. Pour the mixture over the cereal and gently but quickly toss to combine. Add in the remaining 1 cup marshmallows and 1/2 cup chocolate chips and stir until just incorporated.
PRESS INTO PAN: Pour into the prepared pan. Spray your hands with cooking spray and then gently press down the bars (Don't press them too hard or it will make the bars hard).
LET STAND: Uncovered, for an hour (refrigerate for firmer bars).
STORAGE: Store in an airtight container at room temperature. Bars are best eaten the day they are made.

Note 1: Graham cracker cereal: Find a cereal you love. While Golden Grahams® cereal works great and is tasty, I'm partial to the off-brand (Malt O Meal®) Honey Graham Toasters.Note 2: Chocolate: Use high-quality milk chocolate for best results. You’ll get both a better melt and better flavor. My favorite for these bars is either Ghirardelli® or Guittard®. Cheaper brands can have a waxier content that is far less flavorful and doesn't melt down as well.
