Lightly grease a 12-inch pizza pan with nonstick spray and then evenly sprinkle the cornmeal over the cookie sheet. Tap off excess.
Roll out the pizza dough on top of the cookie sheet.
Spread BBQ sauce evenly on top leaving a border for the crust. Add the pork on top, thinly sliced red onion, chopped pineapple, Monterey Jack, and Mozzarella cheese. Add thinly sliced jalapeños (if using) and bacon.
Follow the directions on the pizza dough package for baking time.
After removing the cooked pizza from the oven, top with chopped cilantro, if using.
