This easy FlatbreadPizza can be prepped in 15 minutes or less, thanks to all the store-bought shortcuts we're using. We start with store-bought flatbread -- we use naan in this recipe and you're going to be blown away by what a great stand-in it is for pizza dough!
PREP: Preheat the oven to 400 degrees F. While the oven is heating, line a large baking sheet with parchment paper or a Silpat liner (don't use wax paper or tin foil). Lining the pan is important so the naan doesn't get too crisp on bottom. Set both naans on the lined sheet. Lightly drizzle the naans with olive oil (about 1/2 teaspoon per naan). Bake in the oven for 2 minutes and then remove. This will keep the Naan from getting soggy!
VEGGIE/CHICKEN PREP: Very thinly slice the peppers and red onion. Chop the chicken into small pieces.
CHEESE/VEGGIES: While naans are baking, thinly slice the mozzarella cheese. Pull the naan out of the oven after 2 minutes and spread 1/4 cup of pizza sauce evenly on each naan, leaving about 1/2-inch of crust around the outside.
BAKE AGAIN: Divide sliced mozzarella cheese evenly between the 2 naans, arranging over the sauce and pressing in gently. Dividing evenly among the 2 pizzas, top each with the peppers, chicken, and red onion slices. Press these toppings in very gently. Return pizzas to the oven for 7-9 minutes, or until cheese is melted and veggies are crisp tender.
ENJOY: Remove and allow to cool for 1 minute. If desired, drizzle each pizza with another 1/2 teaspoon olive oil, and then top with shredded basil and a few sprinkles of fine sea salt if desired. Use a sharp serrated knife to cut into slices and enjoy immediately.

There are endless ways to make a Flatbread Pizza! Here are some ideas:
Margherita Pizza: Top naan with pizza sauce, mozzarella, and thinly sliced garden-fresh tomatoes. Top with fresh basil when you take it out of the oven.
Meat Lovers: Add bacon, sausage, pepperoni, ham, etc. on top of your sauce (try Alfredo sauce instead) and cheese.
Veggie Packed: Add a variety of different veggies on top of your flatbread pizzas. Try mushrooms, artichokes, zucchini, broccoli, tomatoes, olives, fresh corn, spinach, arugula, etc.
Add sauce: Drizzle on some fresh basil-pesto, BBQ sauce, ranch, buffalo sauce, etc.
Make garlic bread: Throw on some butter, cheese, garlic, and salt or use garlic naan as the base (instead of plain naan).
Change your cheese: Try a different cheese or a combination of a few different types of cheeses.
