This Buffalo Chickpea Salad is robustly flavored, packed with good-for-you ingredients, and ready in a flash! We combine chickpeas, veggies, and creamy buffalo sauce to create a hearty and delicious sandwich filling.
PREP: Drain and rinse a can of chickpeas. Thoroughly dry; I do this by adding them to a salad spinner -- quick and easy! Give celery a quick chop (just into 1 or 2-inch pieces). Give green onions a quick chop (just into 1-inch pieces) for measuring.
PULSE: Add shredded carrots, celery, and green onions to a food processor. Pulse to break down into small pieces. Add drained chickpeas and pulse again to break down, scraping the sides of the food processor as needed. Add remaining ingredients, seasoning to taste with salt and pepper (we add 1/8 tsp salt and 1/4 tsp pepper). Pulse again to combine until you've got a chunky, integrated mixture.
ASSEMBLE: Toast the bread/sandwich rolls. Layer your sandwich faves -- we like lettuce and a ripe avocado sprinkled with some salt and pepper. Divide buffalo chickpea mixture between 4 sandwiches. Add the top piece of bread/sandwich roll. Enjoy immediately!

Frank’s makes quite a few sauces; be sure to use the one labeled “buffalo” not the cayenne pepper sauce!Note 2: Mayo: Use good, creamy, full-fat mayonnaise. We recommend Hellman’s/Best Foods®.
