Ingredients

  • 1 cup roasted and salted (with sea salt) cashews
  • 7 pitted (~1/3 cup) deglet noor dates (I like Sunsweet, you can find these in any grocery store by dried fruit)*
  • 1 teaspoon of vanilla extract
  • Optional: 1/4 cup miniature chocolate chips.

Instructions

  1. Add the cashews to a food processor (high powered) or a high powdered blender (I use twister jar on a Blendtec) and pulse until crumbly, but the cashews still have some good texture.

  2. Add in all of the dates an pulse until the mixture begins to turn into a thick dough. Add in the vanilla and pulse again until combined.

  3. Remove from the blender or food processor (you should have a thick and smooth "dough"). If desired gently stir in the chocolate chips cookies (make sure the "dough" is completely cool though (sometimes it heats up when being blended).

  4. Roll the "dough" into small bite-sized pieces.

  5. Transfer to an airtight container and store in the fridge. Snack on them pre or post workout or whenever you're craving a sweet treat or snack!

Recipe Notes

*The dates should be soft (old and hard dates won't blend correctly). If they aren't soft, soak them in water for a few hours and then thoroughly dry.
