2cans (10.5 ounces) eachcondensed cream of chicken soup
1/2cupsour cream
1/4teaspoononion powder
1/4teaspoongarlic powder
1 and 1/2poundscooked and shredded chicken
2large broccoli florets
1cupcrushed Ritz crackers
1/4cupmelted butter
1/2Tablespoonpoppy seeds
Instructions
Combine the quinoa and chicken broth in a pot. Prepare according to quinoa package directions.
Meanwhile, remove the stems and cut the broccoli. Steam the broccoli and stir to combine with the cooked quinoa.
In a small bowl, stir together the condensed cream of chicken soup, sour cream, onion powder, garlic powder, and salt and pepper (to taste). Add to the quinoa and broccoli mixture.
Stir in the shredded chicken.
Combine the crushed Ritz crackers, melted butter, and poppyseeds in a small bowl. Top each portion (or the entire dish) with desired amounts of the cracker mixture.
