{No Bake} Healthy Tropical Energy Bites

  • 1 cup old-fashioned oats
  • 1/4 cup + 2 tablespoons ground flaxseed or oat flour
  • 1/4 cup flaked coconut
  • 6 tablespoons creamy peanut butter
  • 3 tablespoons honey
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon coconut extract
  • 1 teaspoon chia seeds optional
  • 1/4 cup yogurt covered dried raisins or cranberries


  1. Mix together all of the ingredients until well combined. If needed, add a little bit more honey or peanut butter if the mixture is too dry or more ground flaxseed if too sticky.
  2. Place in a sealed container in the fridge for 20 minutes.
  3. Remove and squish into (rolling doesn't work too well) cookie balls.
  4. I like to store these in the fridge, but they are fine at room temperature in an airtight container.
