This cake mix soda cobbler requires only THREE ingredients and whips together so quickly! These cobblers make for a great lower calorie summer treat.

These skinny cobblers are some of the easiest summer treats you’ll ever make! The peach cobbler only requires 3 ingredients (the berry requires 5 ingredients) and everything is bought prepared so you’re just assembling!

So the three ingredients? Just frozen fruit, a cake mix (not prepared), and a low-calorie or diet soda! And that’s it for the peach cobbler! The berry cobbler has a few more ingredients — a little added sugar (which you can eliminate if you want to stick to a super light dessert), cornstarch (to keep the berries from being too wet), and cinnamon (again optional).

By using the diet soda and eliminating a lot of extra ingredients, these cobblers cut hundreds of calories! No butter, heavy cream, shortening, eggs, etc. But the best news? The dessert is still AMAZING. No one will believe this is a lower calorie treat πŸ™‚ Enjoy!

"Skinny" Peach Cobbler

Lower calorie peach cobbler made with only THREE ingredients! A delicious and lighter summer treat!

Ingredients

  • 1 (12 ounces) can 10-calorie OR Diet 7-Up
  • 1 package (15.25 ounces) yellow cake mix
  • 2 bags (16 ounces EACH) frozen peaches

Instructions

  • Preheat the oven to 350 degrees F. Spray a 12-inch cast iron skillet or 9 x 13 cake pan with nonstick spray.
  • Fill the skillet with the frozen peaches spreading them evenly. Top with the DRY cake mix.
  • Covering the cake mix as much as possible, pour the soda over evenly. (Don't mix soda and cake mix so you get the crumbly topping instead of cake topping!)
  • Bake for 45-55 minutes or until the a toothpick inserted to the cake comes out clean.

Ingredients

  • 2 bags (16 ounces EACH) frozen mixed berries
  • 3 tablespoons cornstarch
  • 1/3 cup light brown sugar, packed
  • 1 teaspoon cinnamon, optional
  • 1 package (15.25 ounces) yellow cake mix
  • 1 can (12 ounces) 10-calorie OR Diet 7-Up/Sprite

Instructions

  • Preheat the oven to 350 degrees F. Spray a 9 x 13 cake pan with nonstick spray.
  • Add berries to a large pot over medium high heat. Add in cornstarch, brown sugar, and cinnamon if desired. Heat to boiling. Boil 7 to 10 minutes, stirring constantly, until slightly thickened. Spoon into the prepared cake pan.
  • Evenly top with the DRY cake mix.
  • Covering the cake mix as much as possible, pour the soda over evenly. (Don't mix soda and cake mix so you get the crumbly topping instead of cake topping!)
  • Bake for 45-55 minutes or until the a toothpick inserted to the cake comes out clean.

  1. Whoa! I can’t believe this is only three ingredients! I’ve seen several “skinny” recipe using zero calorie sodas and I think it’s an awesome way to lighten up desserts! I haven’t really tried it out for myself, though, so I’ll have to give it a shot! This cobbler looks amazing and like the perfect way to celebrate the first day of spring! πŸ™‚

  4. Heading to the store for peaches. But can I use canned peaches packed in water artificially sweetened have these on the shelf? Or even freeze these canned peaches drain the water off, of course.
