An incredibly easy and no-baking-required

No-Bake Granola is an easy-to-make and healthy snack that takes less than 10 minutes to prepare. And it doesn’t even need to go in the oven! Add in your favorite granola mix-ins like miniature chocolate chips, coconut flakes, and/or dried cranberries.

After making a failed batch of granola bars years ago, I saved the tasty (but crumbly) mixture in a large bag. There was no way I’d waste all those ingredients, even if they didn’t turn into granola bars!

Turns out the mixture was nothing short of addicting — every time someone passed the bag they’d grab a handful to eat. I found myself adding it to the tops of my yogurt and smoothie bowls. 

And so, no-bake granola became a “thing” at my home. Yes, it’s totally made up and may seem a little odd (isn’t granola supposed to be crunchy after all?!). But, I still find myself making this snack all the time. So while it’s a bit unconventional and odd, it’s completely delicious, crave-worthy, and even a bit addictive. And, it truly couldn’t be much easier to make!

But WHY No-Bake Granola?

  1. First, it’s very fast. We can whip this up in 10 minutes or less which means it’s ready basically as soon as we want it. 
  2. Second, it’s very easy. Not to say regular granola isn’t easy, but it definitely takes more effort –particularly the baking process which can take a good amount of time. And then there is the time spent waiting for it to cool…
  3. Third, it’s unique. It’s got the same ingredients you know and love in regular granola, but the texture is different. Overall it makes for a unique snack that is filled with good-for-you ingredients.
  4. And fourth, it’s the perfect hot-day snack recipe. So, when it’s burning hot outside, you can still have granola without turning on the oven and heating up your house!

Adding in optional mix-ins to No-Bake Granola

No-Bake Granola Ingredients

  • Creamy peanut butter adds flavor and nutrition to these oats. It also ensures that they’re filling and satiating. As far as peanut butter goes, I recommend a peanut butter you enjoy eating straight from the jar. We love using one that is slow–roasted and lightly salted with plenty of flavor.
  • Honey sweetens this granola. If you’d like to keep this vegan, try pure maple syrup or agave nectar instead.
  • Vanilla and salt are flavor enhancers for this No-Bake Granola!
  • Old-fashioned oats will give the best results; steel-cut oats will be too coarse and hard, and quick oats don’t add enough texture.
  • Rice Krispies® cereal adds a fun crunch to this granola.
  • Oat flour is simply blended up oats (more on this in the “quick tip” box below). To add more nutrition to this recipe, try flaxseed or hemp hearts instead!

QUICK TIP

Oat flour is just regular old-fashioned oats that we pulverize in a blender until they look like flour. Nothing fancy here, so if you already have the old-fashioned oats for this no-bake granola you’ll have everything you need!

No-Bake Granola Mix-Ins

Beyond the main ingredients listed above, you get to add 3/4 cup of mix-ins of your choice! We love miniature chocolate chips, slivered almonds, and dried cranberries best, but here are some other ideas:

  • Dry-roasted and lightly salted pistachios, coarsely chopped (or really any other nut)
  • Dried tart cherries or blueberries
  • Unsweetened toasted coconut flakes
  • Miniature M&M’s®
  • Reeses’ Pieces® or Heath® bits 
  • Roasted and salted pumpkin seeds (also called pepitas)
  • Raisins or yogurt-covered raisins

Ingredients

  • 1/2 cup (127g) creamy peanut butter
  • 2 tablespoons (53g) honey
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon fine sea salt
  • 1 cup (104g) old-fashioned oats
  • 1/4 cup (26g) oat flour (blend regular oats in a blender -- Note 1)
  • 1/4 cup (9g) Rice Krispies cereal
  • 3/4 cup mix-ins of choice (I used 1/4 cup slivered almonds (25g) 1/4 cup dried cranberries (34g), and 1/4 cup chocolate chips (42g)

Instructions

  • WARM PEANUT BUTTER AND HONEY: In a small microwave-safe bowl combine the peanut butter and honey. Microwave for 30 seconds and then stir until smooth.
  • ADD REMAINING INGREDIENTS: Add in all the other ingredients except for the mix-ins. Mix until combined. It's thick and messy at first, but just keep stirring until a good consistency is formed. You may need to lightly knead the mixture with your hands and then crumble to form granola crumbles.
  • MIX-INS: Add in any mix-ins of choice and stir through and then crumble the granola.
  • STORAGE: Store in an airtight container in a dry, cool place for up to a week. We do like it best within 1-2 days.

Note 1: Oat flour is just regular oats that you blend or put in a food processor and pulse until they are a flour consistency. Measure the oat flour AFTER blending.

    Ok, I am a HUGE granola fan! Eat it everyday esp now that am breastfeeding, as heard that it helps with lactation. It’s a quick yet healthy snack to grab and munch on, even while nursing, as I very rarely have the time to sit and eat lately. Made this today while my baby boy watched and played in his bouncy seat. SOO quick and easy! Beyond excited that I came across your site! Couldn’t have been better timing =o) it was super yummy too. Wondering though, if I did something wrong? This didn’t quite “crumble ” for me, other than a few peices, which held up nicely. what would you suggest? Maybe adding a touch more peanut butter and honey to help the ingredients hold together better? Also, how long does this typically last, and what is the best way to store it? Thanks soo so much for sharing!!

    We do not have a stove to use in my daycare but I made this recipe with my kids. What a HIT!!!! I loved it myself and we used dry coconut. LOL!
